Fast and Friendly Meatballs

The simplicity of this recipe make is so great, you can play with your seasoning to achieve the flavor that best fits your palate. I added Oregano, basil, parm cheese, some minced onion, garlic powder. I will make these again and try this with fresh basil and about 5 cloves of fresh roasted garlic. They are light and airy and I much prefer these to the dense beef meatballs. They are actually very similar to meatballs I had while living Naples Italy.

Italian Spaghetti Sauce with Meatballs

I'm only rating the sauce as I wanted to use ground turkey and other reviews warned against it. The sauce was perfect. I did sub 2 cans diced tomatoes for 1 of the whole peeled. Next time I make this I will just use 4 cans of diced because I wound up cutting them up anyways. The kids and I loved it and my husband said it was just okay (he prefers the heavily sugared American versions). Perfect though in the summer I will add some fresh basil.

Parmesan Garlic Bread

I omitted the garlic powder and garlic salt and when it 5 cloves of fresh roasted garlic. I also sprinkled it with finely shredded mozzarela cheese. Terrific though next time I would cut back on the butter and spread it thinner.

Giblet Gravy II

Nice and easy gravy. I prefer a cornstarch with water mix to flour and drippings. I made it both ways and it's much easier with cornstarch. I used a little less pepper and sage. Perfect compliment to my slow cooker turkey.

Michelle's Peanut Butter Marbled Brownies

Good, not spetacular. I guess I expected more of a peanut butter taste. I might make these again but decrease the cream cheese and increase the peanut butter. 35 mins was also to long at 350. 28-30 would suit it a little better

Slow Cooker Thanksgiving Turkey

Awesome turkey. So easy to throw in the crock pot the night before and have a mock thanksgiving dinner ready when you get home. My husband threw in a can of turkey broth when I wasnt there and it actually made the turkey lose some of its moisture (I've noticed the slow cooker with chicken and to much liquid does that too) Next time I will be sure to do it when he's no where around. The meat was fall off the bone tender and I wont hesitate to use this recipe again. My boys just gobbled it up, no pun intended.

Taco Salad with Ranch Dressing

This was fantastic. I made the chicken the night before and threw in a tsp taco seasoning instead of chili powder. Instead of throwing everything together I left them seperate so each one of my children could build thier own taco salad in a Tortilla taco bowl. I added onion , chopped tomatoes, and avacado to the table.

Refried Beans Without the Refry

This wasn't just a fail it was an Epic Fail. That is waaaaay to much pepper. I felt like that's all it was, beans and black pepper. I followed this recipe to a T and i wont even attempt again..

Best Chocolate Chip Cookies

I'm not a big cookie fan, or even a chocolate fanitic. Rarely will a delve in to any cookies that are not Oreos and I will certainly never EVER eat raw cookie dough. This recipe breaks all my rules. These were fantastic cookies. Not to sweet just the perfect compliment to the chocolate chips. I even tasted the dough because it looked so go and I actually LIKED it whereas usually I have a gag reflex thinking about the raw egg inside. The are perfect for dunking, crunchy on the outside and chewy on the inside the perfect meeting of 2 worlds.

Chicken with Asparagus and Roasted Red Peppers

This was so healthy and delicious. Had to add a little more chicken broth. Even my children scarfed it down. I will happily add this to recipes that will be made more than once in out home. This will be great to make on super hot summer days as its the kind of meal that wont drag you down.

Cinnamon Belgian Waffles

Wow this has to be the best waffle recipe ever. They were so moist! I will never buy the boxed Belgian waffle mix again. I did use 1 tbs sugar (since I was upping the cinnamon) and 1 tsp cinnamon. PERFECT!

Man-Lovin' Potatoes

I was afraid of too much mayo so I did 3/4 cup sour cream and 3/4 cup mayo. My husband also did the prep work while I was at work and thought I said scalloped potatoes so he peeled and cut the super thin with my kitchen aid mixer attachment. They needed to be thicker, my fault. I worried about the amount of onion and garlic powder but it turned out great and not over seasoned in the least.

Chocolate Pretzels

What better than double chocolate? Chocolate and peanut butter! I couldn't find seems not many people can, so like others I used square pretzels and I topped with a peanut butter M&M. 1 minute is perfect I left mine in 2 and the peaks of the kiss hardened a .bit forcing me to pull them off and eat them so I could push the M&M in..oh darn =). Everyone love these and the hardest part was unwrapping the kisses.

Chicken Riggies II

The taste was terrific. My kids went back for seconds and even thirds which is something they never do. I used penne and half and half with a little cornstarch to try and cut back on the fat. You could easily halve the oil and butter and have it cook beautifully. This serves more like 8. There are 5 of us and even with 3 kids eating with adult appetites we were left with almost half.

Banana Crumb Muffins

Fantastic. My husband called me a work and went on for 5 minutes telling me how I should be selling these muffins. My children loved them, the topping is perfect. I doubled the recipe (thank goodness my husband just ate 4) added about 1/2 tsp Cinnamon the the muffin its self and 1 tsp vanilla.

Crab Dip

This is a really tasty dip. I just wasn't in the mood to chop onions so I used some minced onion with some onion powder and threw in a little chives. I served this with Triangular Delights from this site. A crunchy side is a perfect pairing for this creamy dip.

Triangular Delights

Wow I wasn't really expecting much from this recipe so it was shocking how good this salt free recipe really was. I was afraid it would be over seasoned but it was totally spot on! I make these quite a bit healthier by using just 1 tbs oil to have the spices form sort of a paste and spraying my tortilla's with Pam fat free olive oil spray before applying my seasoning paste. It spreads well and will still crisp up nicely yet make it so much healthier for you. When you bake please note that you have to watch them closely you have about 45 seconds from perfectly done until browned and over done. After making these for 4 or 5 days in a row I'm had to thow out 3 tray's because I didnt watch them closely. They should be crisp coming out and golden, if the bend a little they are under done and they will not harden more upon standing. It covered 2 1/2 10 inch tortilla's. I served this with crab dip for this site and cut smaller triangles. I cant wait to make them again! These would be a great substitute for croutons on a salad. I now have a reason to keep tortilla's on hand. Terrific guilt free snack enjoyed by kids and grown up alike. Much better than tostitos.
