Boudreaux's Zydeco Stomp Gumbo

I was feeling lazy so I used precooked frozen Tyson cubed chicken to cut down some of the cooking time. I also omitted the red chile peppers to cut some of the heat for my kids. I increased the meat all around to keep the husband happy. Great flavor still a little spicy for my kids even though they were the one begging me to make it thanks to watching the princess and the frog. Served over rice with cornbread and a gallon of milk LOL. I will make this again!

Basil Cream Chicken

I changed the recipe slightly. I substituted capers for the pimentos and dipped my chicken which I seasoned in flour instead of breadcrumbs. I didnt see the point of the milk bath before dredging so I omitted that as well. Great recipe.

Sesame Pasta Chicken Salad

Terrific! I did leave out the sesame oil since it was the only thing I did not have on hand, I also use dried cilantro which I added when I sauteed the chicken. I also replaced the vegetable oil with extra light olive oil you can not taste a diffrence but it is so much healthier for you. My kids had 3rds. The only change we would make is to saute the green onion with the chicken since 2 out of 5 of us found it to be a bit to strong raw. This is a new summer staple.

I made this for memorial day and it was a smashing sucess! The only change I made is I used cool whip instead of making my own whipped cream to save time. This will be a summer staple from now on!

Surprisingly really moist and flavorful for such a simple recipe. I did slather the seasoning under the skin after I peeled it back so it would get into the meat. Five stars across the board!

I used fresh basil as I was out of the dried. My whole family raved about these. I thought they were a bit plain even using fresh basil maybe a little worcestershire on my patty next time. I will make these again as 4 out of 5 think these are the best ever.

Vegetable Pasta Salad

Caprese Pasta Salad

This was awesome! I did make a few changes that didn't really affect the taste. I used tri-color rotini, I didn't use the optional pine nuts so I just chopped the fresh basil instead of creating a pesto. I used halved grape tomato's since they are a bit sweeter. This makes an amazing summer side dish!

Chocolate Hazelnut Fruit Crepes

These were very good! Though 1/4 cup nutella would be way to overpowering! I used around 1 tablespoon per crepe and thought it was perfect. I replaced half of the banana's with strawberry's. These made wonderful mothers day brunch desserts!

These were fantastic! I had no idea crepes were so easy to make! I guess having a crepe pan really helped. I doubled the recipe and found the recipe was exactly right for 8 crepes! I think these would be even better with cinnamon and vanilla!

Country Manor Breakfast Tart

I made this for mothers day brunch and WOW, I wish I had found this recipe sooner! I added a bit more bacon and ham and a deep 9 inch pie plate since I did not have a 10. I sauteed the green onion with the regular onion for the filling (though that was by sheer accident so I sprinkled a lot less green onion on top). I also reduced the cream by 1/4 cup per quiche based on a review. I did find this need to cook and extra 15 minutes. The fresh thyme and basil just send this over the top!

Shrimp and Crab Stuffed Flounder

This was good. Next time I would halve the cream of mushroom soup mixture and add some cubed bread to the shrimp crab mix so its easier to roll. I would also sub a fresh parm asiago mix for the cheddar as it just didn't quite fit.

Costas French Market Doughnuts (Beignets)

This took a bit of trial and error to get right. The oil on medium high is way to hot and the beignets just burned. My perfect temp was medium low. Dont cook more than 2 - 3 inch squares or 4 triangles at a time or it will lower the temp of the oil to the point that they will not puff up. When cooked properly they will first sink then puff up and float, then turn golden, if they start to spot your oil temp is to high. When I finally got the temp right they seemed a bit bland so I added brown sugar and cinnamon in my next dough ball and rolled it out so it had a marbled effect (this is so the way to go and I will continue to do that). If you put your paper towel and cooling racks on a cookie sheet you will be able to powder them there too and clean up will be a breeze. I made 3/4 of a batch and froze the rest. My 3 kids consumed them all only letting my husband and I snag 2 a piece so I will make a whole batch next time. Please also note that if you use the packets of yeast that it is only equivalent to 2 1/4 tsps and that would make your beignets not puff up as much.

We love this recipe!!! I let this marinate for 8 hours, next time I will marinate overnight as it was slightly mild but still yummy! I did sub honey for the molasses. Perfect! Terrific way to do London broil!
