Broccoli Blue Cheese Strata

This was delicious, but I think the 2nd layer of bread is too much. After pouring the egg mixture over the bottom layer, I looked at it and decided to do without the 2nd bread layer and I am very glad that I did. I can't imagine it with DOUBLE the amount of bread...I think it would be much more bland. I did also sprinkle some blue cheese on top with the cheddar.

Easy Cheese Ball II

We really like this easy cheese ball, and it is pretty easy to keep the ingredients around for last-minute gatherings. We tried using taco seasoning instead of ranch dressing mix and that is really good, too. We plan on trying chili seasoning, as well as onion soup mix, to see how they turn out.

Fresh Pasta

Today was the very first time I have ever made homemade noodles, and my 11yo son and I made this recipe with no problems! We followed the advice of one reviewer who suggested to use 4C of flour with the 6 eggs, and that was perfect. I can't imagine using 6C flour. We used our new Marcato Atlas pasta roller/cutter and made flat fettucine noodles for use in turkey noodle soup. The resting period really made a difference in the dough. It was smooth and substantial. The noodles did puff a bit in the soup and were very, very tasty.

Make-Ahead Turkey Gravy

Wow, finished this gravy today, and it is fantastic. I'm storing it in big jars in the fridge until Thursday. I did do a couple of things differently, though, and thought it might be helpful to share. I had a large package of chicken thighs in the freezer that I had gotten on sale, and decided to substitute these for the turkey wings. They worked great. I used a good quality powdered chicken broth instead of canned broth. I also added 1 tablespoon of salt to the finished gravy...I thought it needed it. After roasting the chicken & onions, I used my large stockpot with a pasta insert for the next step. I put the chicken & onions and other veggies into the pasta insert, and of course, the broth went over top of it. When it was time to take the chicken/veggies out, drain and press out the liquid, it was a snap having used this pot. Also, since I used chicken thighs, there was plenty of useable meat. I boned the chicken and put all the meat an vegetables into a casserole for supper tonight, along with some noodles and a cup of the homemade gravy, mixed with 1 can of cream of chicken soup. Tastes great! AND I have fantastic gravy ready to heat up on Thursday. I'll be doing this one again!

Chocolate Waffles I

Good recipe! I agree with the other reviewers that they are not really crispy, but they are still tasty. Some don't like the light chocolate flavor & want more, but we like it this way. The only reason I gave 4 stars instead of 5 is that the recipe states that it makes 5 waffles. With a large family, we tripled the recipe, hoping to end up with 15 waffles, but instead, got only 10 out of a triple batch. Others might want to know that if they are cooking for a larger group. We ate them with vanilla ice cream and did not make the hard sauce. We also used whole wheat flour and were pleased with the results.

Mom's Traditional Creamed Onions

I used fresh onions & snow peas from the garden to make this recipe and it was wonderful. I did not use all the liquid however. 7 cups milk & cooking water just seemed like too much, but maybe it would be okay.

Cream of Broccoli Cheese Soup I

My 4 year old son ate this with a smile and asked for more!! Great recipe!! I substituted spaghetti (broken into 2 inch pieces) for the noodles and omitted the onions to make it even more kid friendly. I also nonfat dry milk powder because I was out of milk and it worked beautifully!!

Kettle Corn

I noticed one other reviewer said this didn't work. It worked great for us, but I think there must be 2 keys: use MEDIUM heat as the recipe states (most people tend to make popcorn on the highest heat)and really keep it moving in the bottom of the pan. We have one of those poppers that has a crank and it works great with this, but probably would be fine with a regular pot if you keep shaking. Really yummy!!
