Awesome Sausage, Apple and Cranberry Stuffing

This is the fourth Thanksgiving that i made this stuffing and it was a HIT again! i made a few changes and I just made perfection. I used spicy italian sausage and ground beef. When i browned the meat i used fresh herbs (instead of dry) and sauted green peppers, garlic, and tomato along with the onions. I used cornbread cubes insted of wheat and a Rome apples. I stuffed the bird as well as baked the excess. There were no leftovers! It was GREAT!

Jamaican Oxtail with Broad Beans

This recipe is great! I made a couple of changes to suit my taste. I seasoned two pounds of oxtail a few hours before cooking. I browned the oxtail before throwing it in the slow cooker. I added fingerling potatoes, baby carrots,poblano pepper,and a can of drained stewed tomatoes. I cooked it on low for 7 hours and then stirred in the cornstarch mixture and let it simmer for another hour. It was tender and so good. My family loved it!

Tomato Basil Salad

This is a great and easy recipe. I didn't have fresh basil so I used one tablespoon of dried basil instead and let it sit in the fridge for an hour. It came out great. Almost like my mother's.

Caribbean-Spiced Roast Chicken

I am not a Thanksgiving turkey type of girl so I decided to substitute this instead. I used an oven roaster chicken (about 8 pounds) so I used more of each ingredient seasoning to my taste. I used olive oil and seasoned the chicken both under the skin and on top. I also let it marinate overnight. Lastly, I used fresh herbs instead of dry. It makes a huge difference. My family LOVED the flavors. It was a hit for Thanksgiving!!!

Campbell's Baked Macaroni and Cheese

I make this all the time for my husband and my son and they LOVE it!!! This Thanksgiving I doubled all the ingredients and added more of the bread crumb (panko) and butter mixture to the top to make it extra crunchy. It was a hit with the entire family. Even the more traditional cooks gave it rave reviews. It is definitely becoming a staple in my house.

Sarah's Spicy Turkey Chili

I made this for my family and they all loved it. I served it with corn bread muffins and my very picky son asked for seconds! I added a few touches of my own such as sweet corn niblets, fresh green and red peppers, and a chili mix packet. It came out great and I will make it again.
