Prosciutto Wrapped Melon Balls

Lunch Box Pizzas

These were okay. I do have to admit I used ham and pineapple instead of pepperoni so it may be my fault that they are only okay. I tried the recipe because I have used a similar recipe with a ground turkey and ricotta filling that my whole family loves. It was hard to live up to but in general this idea is great for lunches.

Mango Blueberry Muffins With Coconut Streusel

I read the review that said that said to 'run not walk to the kitchen and make these' and took the advice. I am glad I did as these muffins are fantastic! Perfect texture, lovely flavour, and they keep well! I did add a touch of vanilla and when I arrived in the kitchen from my run discovered I had no buttermilk so I used regular milk. I urge you to bake them soon!

Butter Tarts

Super! I used vanilla caramel coffee cream and currants instead of raisins and 1/2 C of coconut and 1/2 walnuts cause that is what I could scrounge up and they turned out great! I made Oil pie crust and made both mini tarts and full size tarts. Thanks for this recipe!

Oil Pie Crust

I was a little skeptical but this crust really worked and it was super easy. It doesn;t quite have the same texture as a butter crust but this is great for beginners, people watching their fat intake or for a heavier pie. I used it for butter tarts and got lots of compliments. Be sure to roll it thin!

Pumpkin Cookie Dip

Fabulous! But you have to love Pumpkin! I mixed in some icing sugar and vanilla. Topped with cool wjip and nutmeg. Served with gingersnaps and vanilla wafers. It went over well and I have enjoyed the little bit of leftovers:)

Ham Bone Soup

Fabulous soup! I added some Thyme, rosemary and sage and a bit of rice. I added all of the bits of leftover vegetable and it turned out really well. I will be making more bone in ham now!

Ham and Fruit Stir-Fry

I thought this was a really nice recipe. I took some of the comments from other reviewers to heart an made a few changes. In order to cut the fruitiness that some people complained about I swirled in a teaspoon or so of toasted sesame oil with the olive oil and threw in 1/3 Cup chopped red pepper. I cooked my couscous in chicken stock with a small pat of butter and salt and pepper. Then in fluffing stage of the couscous I threw in some toasted sesame seeds to tie it all together. I thought it was great!
