I need to find my momentum and get back to my gluten free diet , I felt soooo much better, had more energy, no stomach issues and food tasted good not just a means of fuel : (
HELP any suggestions ???

I have two daughters who eat gluten free. Really does make a difference. I try to take regular recipes and make them gluten free as I don't like to buy too much processed food. Hope you get back on the GF foods as the lasting effects to your system will be well worth it.

I've started breading chicken and making meatloaf and other things with breadcrumbs I make from UDI bread, no one can tell the difference. My one DD's favorite the last time I made it was taking eggplant and just dipping in egg white and water mixed well and then dipping in parmesan cheese and baking then putting a little GF sauce on top. The DH never noticed! Love to get away with making things GF and they don't notice! The nice thing now is that a lot of things are labeled GF so that can really help. Good luck.

Having been diagnosed as gluten intolerant four months ago, it has been a challenge for me to eat GF. One thing that has been working for me is that I have begun cooking and baking on the weekend so that I have GF foods to eat all week. It makes it so much easier than having to come home from work and decide what cook for myself - I just have to reheat and add a salad and GF pasta, couscous, etc. as a side. It also saves money because I'm not stopping after work for something quick.
