Portuguese Pork with Red Peppers

I was slightly underwhelmed by this dish but when I read the description, it is exactly as described. It seemed to be missing something but I really don't know what I would do differently. There was a definite heat to the meat with the pepper/garlic flavors coming through and the sweetness of the peppers did cut it nicely. I did follow the changes mentioned by the author's additional post and also mixed a bit of cornstarch to some chicken broth to thicken the sauce. The meat was incredibly tender and I served this dish with roasted asparagus and buttered parsley red potatoes.

Chocolate Cream Pie II

After reading reviews, I used 4 tablespoons of cornstarch and the pie still was a little loose after setting 24 hours. The taste was incredible however. I also decreased milk to 2 3/4 cups and added 1/4 cup of Bailey's Irish Cream which gave the pie a subtle but unique flavor. Topped the pie with fresh whipped cream and garnished with shaved milk chocolate. This was a big hit with the entire family!

Spicy Spaghetti Squash

I felt this deserved 5 stars for a very healthy, low fat/low carb meal. To save time I halved the squash and cooked in a microwave for approximately 10 minutes with halves face down in a pyrex dish and approx 1/4 c of water. I chose to eliminate the capers and added lots of red pepper flakes to add heat. Topped with freshly grated parmesan cheese.

Urban Legend Chocolate Chip Cookies

Excellent cookie. I, like many, made some minor adjustments for taste. I cut both sugars to 3/4 C and ground the oatmeal in a food processor to a coarse flour. To save time I threw the walnuts and the chocolate bar into the food processor as well and hit the pulse button several times. The chocolate was not quite as fine as grated. I also made the cookies rather large. They were approximately the size of golf balls maybe slightly larger before baking and were approximately 3 inches in diameter when done, yielding about 52 cookies. I kept the temp to 350 degrees knowing my oven and rotated the cookie sheets 1/2 way through baking. The baking time was 9-10 minutes total.

German Spaetzle Dumplings

Recipe is great "as is" although I doubled the recipe to serve 5 adults. I used the tip by another reviewer of putting dough in a large baggie with 6 holes across the bottom using a skewer and squeezing the dough out circling the boiling water, stopping to stir occasionally. I then sauteed in a combination of a bit of bacon grease and butter and fresh parsley. Hubby, who is German, said it tasted just like his grandma's. We had the spaetzle with kielbasa, bratwurst, knockwurst sauteed in beer, onions and a little bit of butter. Not the healthiest of meals but very good!

Pineapple Cream Pie

I made this for the first time for Father's Day because my dad is a pineapple fiend! It was unbelieveably good! I made a few modifications: cut milk by 1/2 cup and added a 1/2 cup of pineapple juice, cut 1 teaspoon of vanilla extract and replaced with 1 teaspoon of pineapple extract. When made with these modifications, this pie is perfect and probably would be even if you don't have pineapple extract. I also used the "Basic Flaky Pie Crust" recipe from this site which turns out flaky and perfect every time! You will end up with extra filling but I just put it in a dish and one of my kids enjoyed it as homemade pudding:)

Ting-Town Barbeque Beef Sandwich

I have made this as written and it is great however the second time I made it, I made a few changes which improved the flavor for our family. I doubled the chili powder, and doubled the cider vinegar and added several shakes of tabasco sauce. We prefer the tang and heat rather than a sweet bbq. I made it with a pork butt roast before and it was incredible too. This recipe works well in a crock pot but today I didn't have the time needed so I slow cooked it in a french crock with a lid for approximately 4.5 hours at 250 degrees in the oven.

Chicken Penne Italiano

The recipe was nice but a little bland. In fairness I made changes without making it as is the first time. I had no tomatoes but used fresh asparagus and used more garlic and doubled the sauce.

Overnight Blueberry French Toast

I only used half the amount of cream cheese and thought it was still too much. Maybe its because I don't think of cream cheese with french toast. The sauce was fantastic however!
