Fettuccini with Mushroom, Ham and Rose Sauce

Very tasty! I modified the recipe based on some previous reviews (I substituted half & half and a bit of sour cream for the heavy cream), and I used prosciutto since that's what I had on hand. I also reduced the butter by 1/4 and added a tbsp of olive oil. It was creamy, delicious and not overly rich. I will definitely make this again!

Sopapilla Cheesecake Pie

I've made this recipe three times, and each time it gets rave reviews. Delicious, fairly easy to put together, but people think it must have been difficult. I scale back on the butter and sugar on top of the pastry (1/2 cup sugar, 1/4 cup butter)and it is perfect.

Butternut Squash Soup II

This was delish! I roasted the squash first, and didn't bother browning the veggies (just tossed everything in the chicken stock and let it simmer until all veggies were soft). I added some garlic powder, cayenne pepper, and red pepper flakes for added spice. I garnished with a dollap of sour cream. Yum!

Spicy African Yam Soup

This was very easy to make and very tasty! I doubled the recipe, omitted the zucchini, and substituted quinoa instead of rice. I recommend using a hot salsa to ensure there's enough of a kick to the soup.

Artichoke Chicken

Bacon Roll Ups II

I would have rated this more stars if I could! It was so yummy, I made a huge batch for a small dinner party and they were gone in no time. So easy to make, and a real crowd-pleaser. I added some hot sauce, garlic powder, and green onions to the cream cheese, and it was delicious!

Italian Chicken with Pesto Potatoes

This is going in my top five! It is so delicious and easy to make. I mashed the potatoes, added a little cream cheese and then the pesto, and it was awesome. The sauce is also very tasty, and very simple! I'll be making this very often.

Freezer Caramel Drizzle Pie

Sooooo good! I made this for a staff BBQ and everyone raved about it! Also, I tried a version with lower fat cream cheese and whipped topping, and it was just as good! This recipe is a definite keeper!

Chicken Breasts with Balsamic Vinegar and Garlic

This was an easy dish that tasted pretty good, but it wasn't amazing. I didn't have a bay leaf or thyme, so I added Italian seasoning instead, and that probably affected the flavour. I also used a bit of red wine b/c I didn't have quite enough balsalmic vinegar. The sauce was good, I especially enjoyed the mushrooms. I will make this again some time, but I don't think this will become a regular meal at my house.

Braised Balsamic Chicken

This meal is great tasting and super easy to make! I added some green peppers and mushrooms to the onion and chicken, and some mozzarella cheese on top of the chicken when it was nearly done. I served this over pasta and it was great!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Sooooooo good and relatively easy to put together. I modified it slightly by adding some feta and mozzarella cheese along with some minced garlic, and it was absolutely amazing! My boyfriend said he was puttin it on his top ten list of favorite meals.

Mexican Casserole

So incredibly good! I used Nacho Doritos in this recipe, and they added a lot of really great flavour and crunch. I did add a few extra spices, including half a package of taco seasoning, which only added to the flavour. This is a very filling meal, I made one pan and there was enough leftovers the next day for another full meal! I'll definitely be makeing it again!

Italian Sausage Soup

All I can say is YUM! This was sooooo good the first night, and even better as leftovers! I do suggest adding the spinach as you reheat the dish, rather than in the first big batch, otherwise it will get a little soggy. This was awesome, perfect for a chilly winter day!

Mushroom Pork Chops

This was a great way to liven up pork chops! My boyfriend doesn't like mushroom soup, but even he really enjoyed this dish. The chops came out tender and yummy, with very little effort needed. This was a pleasant, low maitenance meal that will soon be a staple in my meal plans!

Tuna Broccoli Roll Up Casserole

I found this recipe to be really good, even though I usually can't stand tuna. my boyfriend raved about it and I enjoyed it too. The leftovers were a little soggy the next day, but I expected that, so it was alright. I'll definitely make this recipe again!
