Lighter Banana Muffins

Reviewed: Apr. 26, 2011
very tasty. I used brown sugar (1/2cup) instead of white and prior to baking topped with brown sugar as suggested by other reviewers. Added an extra banana, nutmeg, and cinnamon. Great quick breakfast for the kidlets. with the changes it still made 10 muffins

Baked Spaghetti Squash Lasagna Style

Reviewed: Apr. 19, 2011
very tasty. I baked it in a pan to speed up the process. It's a great "add to" recipe, easy to add addtl items and still retain the great basic flavor. I put in some mushrooms that I cooked up with the garlic. great fast healthy meal.

My Best Clam Chowder

Reviewed: May 17, 2011
I cooked the veggies in bacon grease seemed to add some flavor. once it was ready to serve, I felt it needed more flavor, added some garlic powder to it. Next time I would double the veggies and add another can of clams to fill it up, as ther was plenty of broth. also used 2 cups of 1/2 and 1/2 and 2 cups of 2% milk didn't have the full amount of 1/2 and 1/2 on hand.

Alienated Blueberry Muffins

Reviewed: Jun. 29, 2009
fast, easy and delish! Made these for a play date for moms and kids. they were gone quickly. I was looking for something quick with common ingredients and this fit the bill. Much better than the boxed muffins. I thought they had a great taste and were plenty sweet as written. I made no changes. will make again.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 29, 2006
This was a big hit for Thanksgiving. I took some of the advice of other reviewers and used more stock, about 1 1/2 cups and it came out very moist. I used Chicken stock because I wasn't able to find turkey stock. Used french bread and sourdough to change it up a bit. Omitted the liver. Very tasty and will use this recipe again next year.

Veggie Pot Pie

Reviewed: May 11, 2011
great dish. I added sweet potato instead, added edamame instead of carrots, bell pepper instead of celery, only because thats what I had on hand. Great versatile recipe, I think you can add to your liking. took advice of other reviewers, added 3 extra TBLS of cornstarch. i also added an extra TBLS of soy sauce, and omitted the water, just mixed soy sauce and cornstarch and the end result was a perfect consistency. also used chx cubes instead of veg broth, and salted to taste. will make again. used the pie crust for this recipe and turned out great. I did cook the crust for about 10 minutes before filling it and it wasn't soggy at all. very hearty meal without meat.

I took the advice of some reviewers and added garlic, I also added some sourcream and milk to thin out the soup a little. Overall the dish lacked taste.

Maple Pancakes

Reviewed: May 5, 2011
great easy recipe. Def need to double or triple it for a family of 4. I added 1/2 tsp nutmeg and cinnamon, full of flavor. Also added a heaping tablespoon of flour to batter, it seemed a little to thin for our liking. will use again and again. very delish

Spaghetti Squash I

Reviewed: Nov. 2, 2010
very good. I added some cucumber for some crunch. It was room temp when we ate it, and it was delish. Great for a hot night, nice refreshing dish. I microwaved the squash, poked holes in it and cooked for 12 minutes. will make again.

Roasted Herb Chicken and Potatoes

Reviewed: Nov. 1, 2010
made it tonight just as written, it was excellent. I think next time I will make more marinade to keep the potatoes wet during the cooking, they were a little dry, or try covering the last 30min as others have suggested.

Mother's Applesauce Muffins

Reviewed: May 10, 2011
1st time made as written except added 1/2c oats and 1/2c. wheat germ. I found them to be a little sweet/fatty for breakfast for the kids so this time I did 1/2 the sugar(1/4cbrown and 1/4cwhite) and reduced the butter to 1/2c. added a bit more apple sauce, some nutmeg tasted great. not a huge diff in taste and less fat without the butter.

Creamy Chocolate Frosting

Reviewed: May 6, 2011
great chocolate frosting. I used 2% milk instead of evap. and just added it as needed. very smooth frosting. It covered by 9in 2 layer cake just fine. will use again. great taste. I added some shortening since I was running low on butter.

Light Oat Bread

Reviewed: May 4, 2011
I made as directed, but only used the bread machine to mix kneed and rise. The bread didn't rise in the oven as much as I would have liked during cooking. maybe the standard amnt of yeast would help. Taste was great, a little more chewy than other breads Ive made but good. I may try it with more yeast next time in hopes of a lighter, less dense chewy bread.

Stuffed Green Peppers I

Reviewed: Apr. 19, 2011
loved it, but I had a lot of extra stuffing left over. I cut the peppers in half and filled since we have littles at the house that couldn't eat a whole pepper, could this be the reason for extra? But since the kids loved the stuffing inside, the next night I used it over noodles for them.

Balsamic Roasted Pork Loin

Reviewed: Apr. 12, 2011
very tasty. I let it sit overnight and it tasted wonderful. I took an idea from pioneer woman and seared it in a cast iron skillet first and then put the skillet in the oven, and cooked it for 30 minutes.

Chicken Pot Pie IX

Reviewed: Sep. 9, 2010
great quick recipe. it's refreshing to find a recipe on this site that doesn't involved cream of (fill in the blank) soup. As other reviews suggested, make extra gravy. we like to add a little to the top, without it, maybe a little dry for our taste. I cheated and did a bisquick topping since I was outta crusts. it was still delish. used fresh veggies(corn, potatoes, celery), I think that helps w/flavor, and used chx bouillion in the water to boil chx and vegs. will make again and again.
