Super-Delicious Zuppa Toscana

Reviewed: Feb. 25, 2011
Very good. I did do a lower fat version, used turkey sausage and turkey bacon. If you go this route, I would suggest using a little EVOO when adding the onion since you aren't going to get the fat drippings like you do when using pork bacon. Used low sodium chx broth and added salt to taste at the end. used kale, also added kale and sausage when adding the low fat milk. tasted great.

Spaghetti Squash I

Reviewed: Nov. 2, 2010
very good. I added some cucumber for some crunch. It was room temp when we ate it, and it was delish. Great for a hot night, nice refreshing dish. I microwaved the squash, poked holes in it and cooked for 12 minutes. will make again.

Roasted Herb Chicken and Potatoes

Reviewed: Nov. 1, 2010
made it tonight just as written, it was excellent. I think next time I will make more marinade to keep the potatoes wet during the cooking, they were a little dry, or try covering the last 30min as others have suggested.

Chicken Pot Pie IX

Reviewed: Sep. 9, 2010
great quick recipe. it's refreshing to find a recipe on this site that doesn't involved cream of (fill in the blank) soup. As other reviews suggested, make extra gravy. we like to add a little to the top, without it, maybe a little dry for our taste. I cheated and did a bisquick topping since I was outta crusts. it was still delish. used fresh veggies(corn, potatoes, celery), I think that helps w/flavor, and used chx bouillion in the water to boil chx and vegs. will make again and again.

Very tasty. I used heineken (sp?) bc thats what we had and it tasted great. Next time I will add a little more flour to make it thicker to do the onion rings. Very easy recipe and tasted delish on our fried chicken and onion rings.

Alienated Blueberry Muffins

Reviewed: Jun. 29, 2009
fast, easy and delish! Made these for a play date for moms and kids. they were gone quickly. I was looking for something quick with common ingredients and this fit the bill. Much better than the boxed muffins. I thought they had a great taste and were plenty sweet as written. I made no changes. will make again.

Hamburger Vegetable Soup

Reviewed: Jan. 26, 2009
Family loved this soup. I followed the recipe almost exactly. Added more pasta and added more veggies. I cooked the hamburger with garlic. I think it needed a little bit more flavor maybe will add some salt and pepper next time. Tasted great the next day. This is a great base recipe that you can do so much with. Loved how fast it was to put together. Great weekday meal when you are in a hurry.

Cola Pork Chops

quick, easy recipe. I used bbq sauce since I didn't have any soda in the house. I made extra sauce to coat both sides of the chops before baking. Good flavor. will make again.

Angel Hair with Feta and Sun-Dried Tomatoes

Reviewed: Mar. 30, 2008
I sauted the garlic as others suggested and used fusilli noodles. Great recipe, fast and easy. For leftovers I had to add a little oil since it was pretty dry the next day. I used dried sun-dried tomatoes and soaked them in red wine, added a nice flavor to the pasta.

I took the advice of some reviewers and added garlic, I also added some sourcream and milk to thin out the soup a little. Overall the dish lacked taste.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 29, 2006
This was a big hit for Thanksgiving. I took some of the advice of other reviewers and used more stock, about 1 1/2 cups and it came out very moist. I used Chicken stock because I wasn't able to find turkey stock. Used french bread and sourdough to change it up a bit. Omitted the liver. Very tasty and will use this recipe again next year.

Brunch on the Bayou

Reviewed: Apr. 18, 2006
I made this for Easter brunch and the family loved it. I did make some changes used chicken sausage used yellow onion instead of the green onion used colby jack and low fat milk since that is what I had on hand. I loved that I was able to make it the night before especially since the fam was coming over at 9:30am!
