French Toast I

great quick easy basic recipe. I had some left over french bread from the night before and this quick recipe fit the bill for a weekday morning breakfast for the kids. My kids don't like syrup so this was flavorful enough for them to enjoy it with just a little powdered sugar. I used the electric griddle and it cooked pretty fast.

Lemon Chicken Piccata

Very Tasty!! Based on other reviews, I took the lemon slices out after 8 minutes to avoid any bitterness. I used italian bread crumbs to dredge the chicken. I pounded the chicken before cooking as well.I think next time I will double the sauce so I have some left over to add on top of the chicken as necessary once it's dished. Served with buttered noodles and everyone like it!

Ranch Bean Dip

I made the dip and used the fiesta ranch packet. it was okay. I would suggest using the spicy beans to give it more flavor. I added a can of chopped olives to it to. I think it needs more of a kick.

Cabbage Rolls II

Great, easy recipe. As other reviewers suggested, double the sauce so there is some to use after they bake if you cook them in the oven. There may be enough sauce if you crockpot them? I wanted something quick so in the oven they went. Another review hint I used was to cover the rolls with extra cabbage, worked well as the rolls didn't get too dark, and it saved some tinfoil. no problem taking off the leaves when the cabbage boiled, I cut around the center before cooking and as the leaves cooked off, I pulled them out of the pot with tongs. this recipe made 7 rolls for me, my cabbage was pretty big and we stuffed them pretty good. will make again

My Best Clam Chowder

I cooked the veggies in bacon grease seemed to add some flavor. once it was ready to serve, I felt it needed more flavor, added some garlic powder to it. Next time I would double the veggies and add another can of clams to fill it up, as ther was plenty of broth. also used 2 cups of 1/2 and 1/2 and 2 cups of 2% milk didn't have the full amount of 1/2 and 1/2 on hand.

Veggie Pot Pie

great dish. I added sweet potato instead, added edamame instead of carrots, bell pepper instead of celery, only because thats what I had on hand. Great versatile recipe, I think you can add to your liking. took advice of other reviewers, added 3 extra TBLS of cornstarch. i also added an extra TBLS of soy sauce, and omitted the water, just mixed soy sauce and cornstarch and the end result was a perfect consistency. also used chx cubes instead of veg broth, and salted to taste. will make again. used the pie crust for this recipe and turned out great. I did cook the crust for about 10 minutes before filling it and it wasn't soggy at all. very hearty meal without meat.

Mother's Applesauce Muffins

1st time made as written except added 1/2c oats and 1/2c. wheat germ. I found them to be a little sweet/fatty for breakfast for the kids so this time I did 1/2 the sugar(1/4cbrown and 1/4cwhite) and reduced the butter to 1/2c. added a bit more apple sauce, some nutmeg tasted great. not a huge diff in taste and less fat without the butter.

Creamy Chocolate Frosting

great chocolate frosting. I used 2% milk instead of evap. and just added it as needed. very smooth frosting. It covered by 9in 2 layer cake just fine. will use again. great taste. I added some shortening since I was running low on butter.

Maple Pancakes

great easy recipe. Def need to double or triple it for a family of 4. I added 1/2 tsp nutmeg and cinnamon, full of flavor. Also added a heaping tablespoon of flour to batter, it seemed a little to thin for our liking. will use again and again. very delish

Light Oat Bread

I made as directed, but only used the bread machine to mix kneed and rise. The bread didn't rise in the oven as much as I would have liked during cooking. maybe the standard amnt of yeast would help. Taste was great, a little more chewy than other breads Ive made but good. I may try it with more yeast next time in hopes of a lighter, less dense chewy bread.

Veggie Calzones

delish! Used Valentinos pizza crust from this site. the whole family loved these. It a great recipe for families with diff likes, we allowed each child to put whatever toppings they wanted inside. we even added cauliflower, and it was really good. great versatile recipe.

the only crust I use now, quick simple easy. I follow recipe exactly and it's great everytime. Love that I don't have to precook the crust just put toppings on and cook. love it for a quick midweek meal.

Amish White Bread

made twice so far. 1st time followed recipe and it was a little more dense than I liked, but tasted great. 2nd time took the advice of another reviewer and reduced the sugar. came out perfect, soft delish bread. I would suggest reducing the sugar if you want something lighter. also cheated and used the bread machine for the kneeding and rising then stuck in the oven for 30 min. and it was perfect.

Lighter Banana Muffins

very tasty. I used brown sugar (1/2cup) instead of white and prior to baking topped with brown sugar as suggested by other reviewers. Added an extra banana, nutmeg, and cinnamon. Great quick breakfast for the kidlets. with the changes it still made 10 muffins

Stuffed Green Peppers I

loved it, but I had a lot of extra stuffing left over. I cut the peppers in half and filled since we have littles at the house that couldn't eat a whole pepper, could this be the reason for extra? But since the kids loved the stuffing inside, the next night I used it over noodles for them.

Baked Spaghetti Squash Lasagna Style

very tasty. I baked it in a pan to speed up the process. It's a great "add to" recipe, easy to add addtl items and still retain the great basic flavor. I put in some mushrooms that I cooked up with the garlic. great fast healthy meal.

Balsamic Roasted Pork Loin

very tasty. I let it sit overnight and it tasted wonderful. I took an idea from pioneer woman and seared it in a cast iron skillet first and then put the skillet in the oven, and cooked it for 30 minutes.

Easy Granola Bars

Overall they tasted great, I found them to be a little "wet." I cooked until brown but they didn't hold together like ones Ive made in the past. I used evaporated milk and fresh cranberries, and added 2 tablesoons of sugar. I also used rolled oat but let the oats and milk sit for awhile before adding everything else so they would be soft.

Cranberry Orange Bread

great easy quick recipe. I made muffins and it ended up being about 15 muffins total, i filled them up to get a nice top. Also chopped the cranberries in the cuisinart and used pecans. great taste. for muffins-325 for 25-30 minutes. I used a stone muffin pan i have found muffins need to cook a little longer than in the metal.
