Salad buffet for 50

I made 2 batches of 2 salads, broccoli salad with raisins and tortellini salad.
We also had several green salads, smoked salmon (the only meat), coleslaw, bread, cookies and fruit salad.
I made a salad bar of spinach, sliced mushrooms, grape tomatoes, dried cranberries, feta cheese, mandarin oranges, black beans, garbanzo beans and kidney beans.
The first things to go were the salmon and the tortellini, then the salads that had toppings. My salad bar fixings were the last to go, but I was so glad I'd done them. We had a bigger than anticipated turn out, and the latecomers were able to make a meal
of the spinach & toppings.
I was puzzled that people brought bread, but so glad they did. Many of the kids ate very sparingly, but they all took bread. Next time I'll bring peanut butter or cheese for quick sandwiches.
