Foolproof Rib Roast

This was a perfect recipe! We made this for Christmas Eve dinner, following the directions exactly. I had to leave the house to keep from opening the oven door though! Thank you!

Taqueria Style Tacos - Carne Asada

This recipe was excellent! I used thin cut sirloin steak because I couldn't find flank, and made my own salsa. The marinade for the meat was great. Thanks so much! Update - I made this for the third time, and finally found the cojita cheese at Wal-Mart. It takes these tacos to a whole different level! Take the time to find this stuff!

Mexican Style Shredded Pork

This was an excellent meal! I added some cumin, salt, and pepper after I shredded the pork. We ate some on flour tortillas and some over the rice, with cheese, sour cream, and Fresh Salsa 1 from this website. Thanks!

Easy Slow Cooker French Dip

I have made this several times, and with a few changes it is a great recipe. I used chuck roast, which is seared first with a coating of garlic salt, garlic powder, and onion powder. I used 2 packages of Knorr french onion soup mix, 2 cans of beef broth, and one 12 oz can of light beer (we like lots of au jus). I cook it for about 7-8 hours, then shred the beef, and put it back for another hour or two. I toast the bread under the broiler, and add provolone cheese to the sandwich. Simply perfect! Thanks!

Fresh Peach Pie II

What a great recipe! My husband, son, and father said it was the best tasting peach pie they ever had, cooked or uncooked! We have made 4 pies in 3 days. My only problem is that my glaze didn't set well. I will up the cornstarch next time. Thanks for the recipe!

Fresh Salsa I

Awesome salsa!!! The only change I made was adding some fresh tomato and cutting the canned tomatoes in half, and I also added a little lime juice. My husband took the leftovers to work and it was gone within minutes! Excellent - thank you!!!!!!!!!

Shredded Beef Enchiladas

This was a really good recipe. I made one batch exactly as the recipe states. On the next batch, I covered the top of the enchiladas with the remaining cheese mixture and added enchilada sauce. Very yummy! I think the next time we will try adding tomatillo sauce instead of the enchilada sauce. Also, definitely cook the roast in a crock pot - the meat shreds itself! Thanks for the recipe!!

Pork Chops with Pineapple Salsa

This is a great recipe! Warning though; if you have non-spicy eaters in your family, you might want to substitute the Carribbean Jerk for Teriyaki marinade, and take out the jalapeno pepper from the salsa.

Limehouse Chicken

The flavor was pretty good, and my two small children enjoyed it. I substituted chicken breasts for the chicken thighs. I wasn't crazy about the brown sugar topping; the lime and mint were a nice touch though.

Italian Pork Tenderloin

This was excellent - the entire family enjoyed it. I added some chopped garlic, and doubled the broth and heavy cream. After it was finished, I poured some cooked penne pasta in the pan. Next time I will probably add some flour or cornstarch to the pan before the liquids so the sauce will be thicker, but otherwise it was superb!
