Quinoa and Black Beans

I was looking for a different way to use up some of my quinoa and came across this one, basically decided to try it because of the number of positive reviews, which I will add to. I followed the recipe to the T - except, I added green peppers (which were delicious), no extra salt, and didn't have chili flakes so used chili paste instead for a kick. I didn't have cilantro, too bad, would have been nice. I wouldn't have thought of making such a dish but am now glad I did - it is a fresh view of the typical rice and beans and also a fresh view on quinoa. Highly recommend especially since you can make it your own.

Curried Cauliflower Soup

As for taste, this was fantastic. I very much added more then double of all the spices and added minced ginger to this as well. My only complaint was that the consistency was hard to get right as well as the color of the soup. It wasn't pretty but it sure tasted fantastic.

Sour Cream Pound Cake

delicious! I made this for co-workers who were very happy. 4 stars only because I agree with a lot of reviewers - 375 i think is too hot. My cake started browning at 35mins and at 45 mins I thought it might be done but the middle was still very not cooked. I turned the temp down to 350 and let it cook through. It never burned and actually ended up with a lovely crisp top. Next time I will add lemon.

Raspberry Lemon Muffins

Yum!! Delicious!! I made this with frozen cranberries and doubled the lemon juice and zest to make them extra lemony. They are very pretty, excellent texture... and I'm now hesitant to share my batch since I may just eat them all myself!!!

Turkey Brine

It was my first go at brining a turkey (or even cooking on!) and I used this recipe and instructions. I ended up using fresh and much more herbs than called for here and it turned out delicious.

Couscous and Cucumber Salad

I really enjoy this recipe and it's super easy to make. However, I end up adding a lot more lemon juice and spices to really pull in the flavor since the couscous is so bland. have on hand extra lemon juice, green onions, and parsley. I like this when it has more of a zing to it than called for in the original recipe.

Ginger Veggie Stir-Fry

This always turns out great and is always a hit with friends. I add more ginger and garlic than called for and pretty much whatever veggies I have on hand. Mushrooms soak up the juices really well and I always have those on hand for this recipe. Easy, delicious.

Never Fail Pie Crust II

This is my go-to pie crust always. Funny, though, when I first started making it I must have not added the vinegar. I'm not sure what the vinegar is for in terms of the baking chemistry (or taste), but I finally added it last time and really didn't like the taste or the smell. I will keep doing the same recipe sans vinegar since it always turns out well without it.

Asparagus and Cashews

This is so easy and so delicious. A great way to introduce a veggie to any dish. It's soy sauce based so goes well with another soy-based main dish but I've brought it as a potluck side dish and everyone loved it with other main dishes. Per usual I tend to double or triple the amount of garlic and ginger called for and it always turns out so tasty.

This turned out great! I made the recipe exactly as the original called for except that I added perhaps 1/8 cup less oil (not sure if that made a difference or not). Next time I will add other things like pumpkin seeds or cranberries. I wasn't sure what the texture would come out as but it's nice, dense, and chewy without being obnoxious. The molasses adds a lovely sweetness and color and I may try next time to add more molasses and less honey and oil for a richer color and more bitter taste. All in all excellent.

Chocolate Peanut Butter Bars IV

I have made this recipe at least 6 times all to rave reviews. I like to add just a little more peanut butter for flavor and just a little more chocolate chips to evenly coat. If you score the peanut butter/butter/sugar mix a bit before adding the melted chocolate it helps the layers stay together a bit better. Love it! Easy and quick.

To Die For Blueberry Muffins

What a hit! Needed to use up blueberries and loved these muffins. Very easy to make. Only suggestion, the recipe for the topping yields too much and is too buttery so that when it was cooking a lot of the butter ran down the sides of the muffins and into the tray and I had only used half of the amount. I made them again and didn't use the topping and they were still delicious.

Lentils with Tomatoes

Delicious. I did not have time to peel and seed the tomatoes, so I cooked them a little longer to make them nice and soft. I used a yellow pepper instead of a green one as well as some garlic. A delicious way to use lentils.

Sicilian Lentil Pasta Sauce

I loved this and so did my boyfriend! I added a large, chopped carrot to the mix of veggies. I also subsituted a half cup of light, red wine when I added the three cups of water. I wasn't sure how long to simmer the lentils before adding the sauce (ended up being about an hour) but it ended up perfect. Next time I will try some spices like pepper, oregano, and other Italian seasonings.
