Quinoa and Black Beans
I was looking for a different way to use up some of my quinoa and came across this one, basically decided to try it because of the number of positive reviews, which I will add to.
I followed the recipe to the T - except, I added green peppers (which were delicious), no extra salt, and didn't have chili flakes so used chili paste instead for a kick. I didn't have cilantro, too bad, would have been nice.
I wouldn't have thought of making such a dish but am now glad I did - it is a fresh view of the typical rice and beans and also a fresh view on quinoa. Highly recommend especially since you can make it your own.
