Mexican Bean and Rice Salad

Excellent recipe! Healthy and delicious. I used pinto beans instead of kidney and 1 red pepper cause that's what I had. Also used grilled fresh sweet corn instead of canned. But this is my next carry-in dish for sure!

Baked Teriyaki Chicken

This was delicious! The only change I made was to replace the white sugar with 1/3 c. Splenda and reduce the heat to 400. Wonderful!!

Quick and Easy Pancit

Excellent recipe! I also added shrimp. Fresh lemon is an absolute MUST with this dish. I added a few red pepper flakes for a slight bit of heat.

Suki's Spinach and Feta Pasta

When I found this recipe, I thought this sounded wonderful. Then I saw the calorie and fat count-ugghhh. So I reformulated the recipe and used only 1 tsp of olive oil, whole wheat penne pasta, extra garlic and only 6 oz. of feta cheese. It was still WONDERFUL!!!! And the calories came to just over 300 per person with a huge serving! Great recipe!

Zucchini Patties

I followed the recipe exactly except I added fresh ground black pepper and a little garlic powder. The mix did seem to get watery as I went on, next time I may sprinkle zucchini w/salt ahead of time, drain, & then fry. The trick to them staying together was to spread them thin, and not flip until golden brown on bottom, then turn. The thicker ones were mushy inside. But a good idea for zucchini.

Hamburger Hash

This was good comfort food, nothing fancy but good. I made a few changes: I added a little garlic powder to the hamburger as it was browning, after hamburger browned-I added the potatoes and browned them as well. Color was better. Then I added some worchestershire sauce to the beef broth and cooked uncovered until the broth almost evaporated. Yu

Sauerbraten Klopse (Sauerbraten Meatballs)

This was great-the only thing was mine were a little dry and I think that's because I added an egg to hold them together and I used gr. sirloin instead of hamb. Recipe called for 2 TB of water & 2TB of flour to thicken, that was like paste so I only used a drop. Next time I will use reg. hamb and bake and use the gingersnaps to thicken.

Slow-Cooked German Short Ribs

This recipe was excellent! I substituted grape juice for the red wine and used red wine vinegare. The sauce thickened on its own so I didn't need to at the end.
