Zesty Marinated Vegetables

I was entertaining Atkins dieters and needed low carb recipes. I followed another reviewer's advice and used 1/3 cup olive oil. Also substituted sugar with Splenda. My guests LOVED this - very colorful and tasty! Will definitely use it for the holidays as well.

Apple Bacon Tomato Soup

Greek Penne and Chicken

I used 8 oz of pasta and 1/2 cup of feta to control the calories/carbs. Even at that, I could easily feed 5-6. Very tasty and I will make again.

Ratatouille

This was great - baked it in a 9 x 12 dish to give you an idea of how much it makes. I look forward to the leftovers this week. I used about 1/2 c of pecorino romano cheese rather than the parmesan.

Dressed-Up Broccoli

This is outstanding!!! I steam the broccoli, rather than microwave. Also add a little color with a fresh tomato cut into chunks before broiling.

Italian Vegetable Soup

Great soup. I used frozen corn and green beans, one can of kidney beans, about 1/3 cup of ditalini and red cabbage (that's what I had on hand). Soup is healthy and satisfying. Will definitely make again - my husband liked it very much as well.

Taco Seasoning I

Cranberry Pistachio Biscotti

I've tried a few biscotti recipes, but this one is a keeper. I used slivered almonds rather than pistachio . . . either one would be fine in a great cookie like this.

Tangy Turkey and Swiss Sandwiches

Beef Pot Roast

I have made this several times with a sirloin tip and it is absolutely fantastic. Have also added potatoes and carrots to roast. Best result was in a LeCreuset pot, going from stove top to oven. The meat is tender and moist, the gravy/juice outstanding.

Tortellini Soup I

I used Gianelli hot italian sausage and a food processor for the veggies. Absolutely NO GREASE from the sausage and the taste was awesome. Definitely a keeper - top of the list!

Chicken Pot Pie IX

I have made this MANY times. The only small change is I add 1/2 tsp poultry seasoning and place the chicken and veggies with gravy in the bottom of my pie dish and then cover with a pie crust on top only to reduce the carbs/calories. Many friends and family have raved about this recipe.

Ratatouille Bake

This is a great recipe. Quick. Easy. I have also used tortellini as well as mini ravioli. Rather than mozzarella cheese, a four cheese blend (Trader Joe's quattro) or grated Italian cheese on top is also very tasty. When I don't know what to make and have limited time, this is the recipe. My adult children and their familes also love it.

Roasted Carrot Salad

Different but delicious. I did not measure ingredients but was close to the amounts called for in recipe. I did use feta cheese and spinach rather than blue cheese and arugala. Any combination would work that one prefers - it does not take away from the original recipe. Will definitely make again.
