Dressed-Up Broccoli

This is outstanding!!! I steam the broccoli, rather than microwave. Also add a little color with a fresh tomato cut into chunks before broiling.

Ratatouille

This was great - baked it in a 9 x 12 dish to give you an idea of how much it makes. I look forward to the leftovers this week. I used about 1/2 c of pecorino romano cheese rather than the parmesan.

Greek Penne and Chicken

I used 8 oz of pasta and 1/2 cup of feta to control the calories/carbs. Even at that, I could easily feed 5-6. Very tasty and I will make again.

Apple Bacon Tomato Soup

I was entertaining Atkins dieters and needed low carb recipes. I followed another reviewer's advice and used 1/3 cup olive oil. Also substituted sugar with Splenda. My guests LOVED this - very colorful and tasty! Will definitely use it for the holidays as well.
