Chocolate Banana Bread
I cut the recipe in half for one loaf. Also used half the sugar (1/2 cup) and 1/4 c butter, 1/4 c shortening (my preference). Froze well. Very moist and tasty with a subtle banana flavor. This recipe should not be graded low because of the combination of bananas and chocolate as one person did. It was their choice to make this recipe which clearly by the title combines chocolate and banana! I don't get how one can give a low grade based on that! Would make again.

Modenese Pork Chops
I think this is the best meal I have prepared EVER. I used half butter/half olive oil. I also used a cast iron skillet and after browning, placed the skillet right in the oven to finish cooking along with a separate dish of small potatoes, onions and broccoli with a drizzle of olive oil and sea salt. Baked everything for 1/2 hour. FANTASTIC.

Apple Squares
I omitted completely the white sugar. Just 1/2 cup brown sugar. My grandson (age 3) said it was "the best cake I ever got!".
