Strawberry Spinach Salad I

this was really good. I used canola oil and white wine vinegar. I also reduced the sugar to 1/4 of a cup and added salt & pepper to taste.

Beer Margaritas

These are great! Definitely use a mexican beer - I prefer Corona Light - and I used two beers to cut the sweetness of the limeade concentrate. I am usually not a big margarita drinker, but these were refreshing, and delicious!! Will be making these A LOT this summer!

Real Hummus

Most cans of garbanzo beans come in a 15 1/2 oz. size, so you will need to buy 2 cans. I didn't realize that I had only used 15 1/2 oz. until after I made it. It was definitley too salty! However, after I added some more beans to it, and a bit more tahini it turned out pretty good.

Southwestern Egg Rolls

These are good! I made a few changes like omitting the spinach, increasing the amount of chicken, adding about 1/2 can of Cambpell's pepper-jack cooking soup, and used pinto beans instead of the black beans. I used large tortillas and cut them into small squares to make mini-rolls. I sprayed the tops with non-stick cooking spray and baked them. Turned out great and everyone loved them - great appetizer!

Caroline and Brian's Stuffed Mushrooms

I used 1 pkg of spicy pork sausage and browned and crumbled that on that a stove and kept all other ingredient amounts the same. I used 4 small containers of baby bella mushrooms and made this as an appetizer. I also added some italian style shredded cheese to the filling. It was delicious and a hit at Easter! Thanks!

Carrot Spread Surprise

this turned out horrible. Maybe my carrots were not sweet enough and didn't balance out the pecan flavor? I tried it with several different crackers, and it was not good on any of them! I didn't bring it to my dinner party and would not make it again.

Jamie's Cranberry Spinach Salad

this turned out really sweet. Next time I would reduce the amount of sugar to 1/4 cup and then add more if necessary to taste. Also, I am not a big fan of sesame seeds, so I would reduce that to 1 tblsp. This is a good base dressing though - you could experiment with different vinegars and spices.

Cream Cheese Tart Shells

These are awesome and so versatile! I added a touch of cinnamon and kosher salt to the dough to enhance the flavors and then filled them with apples for mini apple pies. They were a hit at Christmas Eve! Then for Christmas morning I made them again (this time omitting the cinnamon) and made mini quiches! Everyone raved about the crust and how flaky and buttery they were. I will use this recipe over and over! Thanks!!

Raspberry Vinaigrette Dressing

This dressing is delicious!! I added a bit more mustard and oregano, and only used 1/4 cup of sugar. I served it with a mixed green salad with shaved red onion, glazed walnuts, fuji apples, and feta cheese. Everyone at my dinner party said it was the best dressing they have ever had! Thanks for a great, easy dressing! This one is a staple in my recipe box!

Beef Tenderloin With Roasted Shallots

Amazing!!! The sauce is so wonderful - everyone kept pouring on more and more! I used filet steaks instead of the roast and they worked perfectly! I omitted the bacon becuase I forgot to buy it at the grocery and it was fine without it - I just used olive oil to sear the steaks. Next time I will double the sauce!! Thanks for a great recipe that will impress your guests every time!

Michelle's Soft Sugar Cookies

Good soft cookie recipe! I chilled the dough for a full 24 hours and they were easy to roll and cut out. I added cinnamon to the batter and next time will add maybe a bit more vanilla.

Four Cheese Macaroni

Delicious! I made this for Christmas dinner along with meatloaf - true comfort food! I added a few more spices to mine, but it is delicious with just the base recipe! I also added crushed Ritz crackers to the top to add a nice crunchy texture. Wonderful reheated the next day as well! Thanks for a great recipe!

Brown Sugar Meatloaf

This is a great base recipe for meatloaf! I haven't made many meatloaves, but this one turned out great! I did add a few of my own seasonings, and as other reviewers suggest, I put the brown sugar and ketchup on the top of the meatloaf instead of the bottom. It was very moist and delicious! I served it for Christmas dinner and everyone just raved about it!
