Chicken Tortilla Soup I

Great recipe! Easy to throw together on a busy weeknight and had great flavor. I used 2 14oz cans of diced tomatoes as that was all I had on hand and it turned out great. thanks for the recipe!

Pumpkin Cookies I

These were very good! Very soft and cake-like. Instead of raisins I put craisins in 1/2 the batter and also tried chocolate chips in 1/2. Both variations were good. I added additional spices to taste per other reviewers' suggestions.

Banana-Zucchini Bread

I make banana bread almost every week. This was a great recipe to change things up a bit! I did make some adjustments based on other reviews/personal tastes. However, the base recipe is great and it turned out very moist and yummy!

Pecan Sandies

I used butter instead of margarine and 1/2 brown and 1/2 white sugar. These were good warm but a few hours after I baked them, they were so dry they just crubled. I don't think I overbaked them as I didn't even let them get brown or golden. Oh well, they were good when dunking them in milk.

Rick's Special Buttercream Frosting

This was a good recipe and worked well for piping. I don't like super sweet frosting so I decreased the sugar to 6 cups. I also used 1 1/2 cups butter and 1/2 cup shortening. Since I didn't add as much sugar, it didn't seem to need as much liquid. I added just a few tablespoons of whole milk and it was light and fluffy!

Beer Cheese Dip II

I used Blue Moon and the flavor of the beer was overpowering to me. I added more cream cheese and some seasonings to mellow it out. It was a hit at the party and got better after it set for awhile. I think it would have been even better hot. I would use a lighter beer next time.

Beer Dip I

I thought the beer flavor was overpowering - but maybe it was the type of beer I used? I used Blue Moon. Took the advise of others and only used about 1/2 of the seasoning packet. I ended up adding some mayo to lessen the beer flavor and added a can of green chiles which added some good flavor.

Barbecued Shredded Beef

Good base recipe. I used a 7lb roast and still only used 2 beers. Cooked in the crockpot on low for 8-9 hours. Added a few of my own seasonings and blend of bbq sauce after I shredded it. Went over very well at my Super Bowl party!

Chicken Enchilada Dip

Made this for my Super Bowl party and got great reveiws and was asked for the recipe. next time I might use 1/2 cup of mayo and a 1/2 cup of sour cream. I used pepper jack cheese, added a bit of taco seasoning and also added a bit of green enchilada sauce. Was delicious with tortilla chips!

Downeast Maine Pumpkin Bread

This was good - very soft and moist and definitely better if you let it sit a bit! I did make the following changes: 1/2 cup oil and 1/2 cup unsweetened applesauce, 1 cup brown sugar and 1 1/2 cups white sugar. Next time I would probably omit the water and just add more pumpkin puree. Thanks for the great recipe!!

Ranch Oyster Crackers

These are good crackers. I used a little more than half of the dressing mix and it was very flavorful without being too salty. I omitted the lemon pepper. I added these to some other snacks such as pretzels and cashews for a party snack mix.

Ham and Fresh Basil Pinwheels

Good base recipe with lots of room for modifications. I substituted turkey for the ham in some of them, added provolone cheese and spinach in some, and also drizzled balsamic vinaigrette in them to add a bit more mositure and zest.

Rich Chocolate Frosting

Delicious!!! I halved the recipe and it made enough to frost 24 cupcakes. I only used 2 cups of confectioner's sugar (even though half the recipe would call for 4 1/2 cups) and it was plenty sweet. I think the full amount would have been way too much. I also substituted 1/2 of the milk with strong brewed coffee to enhance the chocolate flavor.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These are amazing!! I made them along with 3 other flavors of cupcakes for a birthday party and these were the first to go. Not too sweet and the tops were a little crunchy which gave great texture! I added the confectioners sugar slowly and to taste. I did not use all that the recipe called for and I think it would have been way to sweet had I used all of it. After I iced them, I sprinkled the the tops with cinnamon and garnished with white chocolate shavings.

Sandy's Chocolate Cake

I wanted to make cupcakes with this recipe. The batter was delicious but I had to throw all the cupcakes away! They sunk in the middle and were so crusty/crunchy on the edges. Maybe I will try again if I am making a regular round cake.

Apple Pumpkin Muffins

These are great!! I will have to try the healthier recipe changes as some other reviewers have listed! I used 1 cup of white sugar and 1 cup of brown sugar, added some pecans, and added oats to the streusel topping! The muffins needed a bit more baking time, but that might have just been my oven. They turned out very moist! Yum!!!

Baked Creamed Corn II

I ended up modifying this recipe quite a bit, but this gave me a good starting point for my own version. This recipe as written would be way too rich I think. I used over twice the amount of corn, used less cream (and switched that to half & half) and the same amount of cream cheese and my version was still VERY rich! I also gave mine a mexican flair with green chiles and mexican spices.

Corn Dip II

I used a bag of frozen white corn and used a 1/2 pkg of cream cheese and cut the sour cream to 1 cup. I also had to add more spices as it was a little bland. This is also great with salsa served on the side! Oh - and definitely serve it hot!

Bronco Burger

These were great, especially topped with lettuce, pickles, and bbq sauce! These are huge burgers, so you can make more burgers than the recipe states if you make them a bit smaller.
