Andy's Spicy Green Chile Pork

One of my new favorite. Love the simplicity of this dish. Substituted serrano for jalapenos other than that I changed nothing.Very good thanks Andy:)

Hearty Split Pea Soup

I'm not a huge fan of split pea soup. I am now though Delicious! I have a big family so doubled the recipe and used chicken bouillon cube instead of water per other reviewers. I didn't have any jam bone so I fried up bacon and crumbled on top. Thanks for sharing a great recipe:-)

Adobo Chicken with Ginger

I used boneless skinless chicken and left out the ginger since I didn't have any. Browned the chicken. Then I started off with 1 cup low sodium soy sauce & 3/4 cup white vinegar it was to tart to me and keep mixing the soy &vinegar to my liking it was still a little tart so I added 3tsp brown sugar & 1 cup water. Brought it to a boil & let it simmer for about 3 hrs adding a little water to keep chicken covered. I still gave this recipe 5 stars because it is a great starting point and it was delicious my whole family loved it! As others reviewers have stated I think the key to this recipe is finding the right balance between the soy & vinegar and adjusting it to your tastes=) Next time I will try it with the ginger.

Chicken Tortilla Soup I

I have used this recipe for years and love it especially the hominy. My only suggestion is you may want to leave out the green Chiles if you have small children or don't like it spicy. Thanks for a great recipe =)

Delicious Chicken Casserole

This recipe was great! I skipped the celery salt though because I didn't have any. I used a whole 3lb chicken and a whole container of sour cream instead of 6oz to the mix. This made alot so I made 2 casseroles and had again the next night kids loved it =). The only thing I would change is the 1/2 cup of butter next time I will use 1/4 cup when mixing with crackers because it was a little rich. Thanks for a good recipe.

Homemade Flour Tortillas

Not sure what all the fuss is about Awful!! I followed the recipe exactly it just tasted like flour instead of a tortilla. After cooking the tortillas the mix was crumbly and fell apart I could not use the tortillas for anything like enchiladas etc. My Mom always added lard and hot water and let the dough rise maybe that was the problem. I will admit that the dough rolled out nice that's the only reason why I gave it 2 stars..

Mexican Pork Chops

I tried this recipe last night, when my parents came over, everyone loved it,It does make alot so you may want to adjust measurements. I browned the chops about 12 mins. either side, with salt & pepper. And I added a few things, I sauteed 3 cloves garlic,1onion. Added 2tbsp. cilanto, 2 tbsp. ground cumin. And used black beans instead of kidney. I have a toddler so I only used 1/2 can green chilies, she loved it. When I took it out I grated Asadero Mexican cheese on the rice mixture. Yummy, And made homemade corn tortillas with it. If you get a chance try this recipe, this will be a keeper at my house.
