About this Cook
I am a Japanese, Filipino, Spanish and English American - so there were always wonderful dishes prepared in our home, with wonderful aromas, particularly during the holidays. I married into an Hispanic family, and have inherited multi-cultural recipes. There's nothing nicer than great food and large family gatherings to warm your soul.

Are rare. I made an expensive dip recently from an untried recipe; my garbage disposal gobbled it up!

Apple Strudel Muffins
Tasty and moist. I only added 1t cinnamon to the wet mixture, and changed to 1/2c white sugar and 1/2c brown sugar. White sugar would work fine if you don't have brown. I always prepare wet mixture first when baking, to allow for all ingredients to come to room temp. I used 2 med. Fuji apples, peeled and diced in very small pieces, which came to 2c apples. 1)In a medium bowl, mix apples with sugar to allow them to macerate while preparing other ingredients. In a small bowl whip up to 3 eggs (for extra moisture) with vanilla, as if you were whipping scrambled eggs, then add to apple mixture. Mix in 1 t cinnamon, and blend well. 2)In another bowl, sift flour and dry ingredients through a wire mesh food strainer, and blend well. Make a deep well in the flour mixture, and add the wet batter, mix together well. 3)I always use my hands when making crumb topping, smoothing out any hard lumps of brown sugar. 4)Use cupcake liners if you have them, rather than greasing the pan. If your oven tends to run hot, turn temp. down to 350. This is a very good, basic recipe. You can add raisins, chopped walnuts, or use a few over-ripe bananas in place of apples the next time around.

Broccoli Cheese Soup
Delicious! I read the recipe and thought their were too many liquid ingredients for the amounts of broccoli and cheese, so I modified the recipe as follows: I boiled the broccoli florets in salted water until tender, then drained. In a 2 quart soup pot, sauteed one small, chopped yellow onion in approx. 3 heaping Tablespoons margarine until translucent. Added the broccoli and 2 cans of chicken broth to the pot. Brought the ingredients to a slow boil, then turned to low heat and added the pound of cubed Velveeta, stirring until melted. Sprinkled with granulated garlic to taste. Mixed 3 heaping Tablespoons cornstarch with one cup milk, and added to the soup to thicken. This was more than enough for my family of four. Great recipe!

Famous Chicken Adobo
My Filipino family's chicken adobo recipe is very similar. We use 1/4 cup red wine vinegar, 1/2 cup soy sauce, 1 cup water, 2 bay leaves, and omit pepper. A generous seasoning of granulated garlic can also be used in place of garlic cloves. A nice variation is also adding a little ground ginger. Delicious over steamed white rice!
