Tofu Tacos I

When I tried the tofu mixture on its own it had an unappealing "dried spice" flavor. But once it was tucked into a hard shell with all the accouterments it immediately brought to mind the Ortega mix/beef tacos of my childhood.

Did anyone take a look at the number of calories in this?? Don't make it if you're looking for something healthy, or if you're planning to eat other things with your meal in addition to the salad.

Iced Pumpkin Cookies

These are light, fluffy cookies that are more like little spiced cakes. The texture, flavor, and moistness of the finished product were perfect! I didn't have ground cloves, so I threw in some allspice and ground cardamom instead. I also added more of the spices in general because you can never have too much cinnamon. And I always double the amount of vanilla in any recipe. As for the glaze, it also worked out perfectly! I was apprehensive because my glazes usually don't dry, leaving sticky, unstackable cookies. I was also making it with water because I didn't have milk. To my delight, this glaze dried almost immediately to the ideal hardness. I think I will be using it with other recipes whenever a basic sugar glaze is needed.

Delicious Pumpkin Bread

This is the best pumpkin bread I've ever had, BUT I made a lot of changes to the recipe. I havled the sugar amount because the sugar-to-flour ratio is way too high, especially for bread. Even then it was a little too sweet. I also had too cut down on the wet ingredients to offset the removal of the sugar. I halved the oil-- a whole cup seemed like way too much anyway-- and used only 3 eggs (the recipe also seemed to call for too many of those). And of course I upped the cinnamon and nutmeg amount. I always do that. I baked the batter in 4 mini loaf pans, and the results were beautiful and delicious. The texture and consistency of this bread is amazing! I'm going to try freezing a loaf to give to my boyfriend next time I see him. I thnk this bread will freeze extremely well!
