Southern Potato Salad

Perfect proportions! I would give this ten stars if I could. Using this recipe you can easily tweak it the way you want. I toss the potatoes with vinegar and add a little sugar to the dressing, also some dill pickle instead of relish, and I like it cold.

Rice and Lentil Casserole

Love this dish! Used brown rice, hot Italian chicken sausage. Took 60 minutes to cook. Instructions and serving size are right on. Did not have bell peppers, added some chopped red cabbage in last 5 minutes to boost nutritional value. Will make again.

Cranberry Zucchini Bread

I made this with 2c whole wheat flour and 1c all-purpose flour. Had only 1.25c zucchini, and used 2c cranberry plus about .5c raisins. It turned out great!

Delicious Baked Chicken

This was so easy and so good. Very moist. I used chili oil instead of plain vegetable oil which added some heat. I was generous with the worcesteshire sauce after reading the recipe could turn out bland. I cut up a whole chicken, covered the chicken for the first 45 minutes, then turned the pieces and cooked them uncovered for another 10 minutes, then covered them again for 10 minutes when I took them out of the oven. I made a sauce of the pan drippings with cornstarch and half&half and poured that over wild rice. Will make again!

'Out of Salad Dressing' Salad Dressing

I thought this was very good and my husband thought it was delicious. I used half&half instead of milk and just a squirt of light mayonnaise. I think it would be better with milk (or half&half) and sour cream. Thanks for a quick and easy dressing recipe!

Hearty Hot or Cold Roasted Tomato Soup

I'm making my second batch in three days. Last time I used less broth, and was out of basil---but every drop was so delicious! We like it warm. Today I'm doubling the recipe and I plan to keep a batch in the fridge & freezer, because it's not only great as it is but this will make a great base for other soups and for sauces.
