Microwaved Potatoes Lyonnaise

Super easy recipe. We have a dairy allergy so I subbed the margarine for olive oil, and it was fantastically easy. Took 5 minutes to prep using my food processor. I used the slice attachment to slice the potatoes and onions very quickly. I always ate these for breakfast at the dining hall in college, but I might use this as a super easy dinner side.

Peanut Butter Pancakes

I woke up with a pregnancy craving for peanut butter pancakes - wasn't even sure if they existed! These were the best pancakes I've ever made! Only substitution I made was 1/3 cup of mike for 1/3 cup of water, and I guesstimated at the amount of evaporated milk, since I only had 12 oz cans. I topped with some strawberry preserves I melted in the microwave. Thanks Dorothy!

Grandpa's Classic Coney Sauce

Never had anything but chili on top of a hot dog before - this was phenomenal! I halved the recipe; only changes I made were I didn't have enough ketchup, so I made my own up with a can of tomato paste, some vinegar, water, a little sugar, and some onion powder to taste. It ended up being a little more "ketchup" than the receipe called for. I also mixed about 1/4 cup of barbecue sauce in, and put in an extra 1/4 tsp of worcerstershire sauce.

Baked Ziti II

My husband pretty much followed the recipe as provided, with a few differences (only reason I didn't give it 5 stars) He added some seasoning (salt, pepper, fresh oregano, italian seasoning, garlic powder), and didn't put quite as much tomato sauce on the top (I think next time I would, though). We also used pennette instead of ziti, since that's what we had. An excellent non-meat recipe!

Best Green Bean Casserole

Made this a year ago to bring to my in-laws for Thanksgiving - was absolutely awesome! I used whole frozen green beans. If you use frozen beans, I recommend defrosting/heating them first in order to more easily mix in the soup and cheese. Then I just popped it all in the oven.

My mom and sister are vegetarians, and tofurkey just isn't an option for Thanksgiving. My mom absolutely loves this recipe - I changed the recipe by adding wild rice instead of white bread
