Cindy's Awesome Clam Chowder

My son's "Culinary Careers" class was assigned to create a restaurant complete with floor plan, decor, theme, menu, etc. They had to present their restaurant to the class (and some faculty!) including one sample dish from the menu. This was the sample dish we provided. I figured that since it was seafood, I might have plenty of leftovers at the end of the day...WRONG! The slow cooker it put it in to keep warm was practically licked clean!! I got several requests for the recipe, including from the kids in my son's group that created the restaurant and the culinary careers teacher. It was super awesome!!

Truck-Stop Buttermilk Pancakes

I was very disappointed in these pancakes. After reading many of the reviews, I was really excited to try them, looking forward to fluffy, warm pancakes. Instead I got thin, bland, tasteless pancakes. I don't know how anyone could think these were better than IHOP. I followed the recipe exactly. I didn't scale the recipe down and no one was interested in eating any more that what I cooked. I'll keep looking for a better recipe and use boxed mix in the meantime.

Chicken and Corn Chili

I made this as a healthy, low-fat hot lunch that I could enjoy at work. As it was cooking today, I loved the aroma and--I admit it--I had to life the slow-cooker lid a few times to taste it. I can't wait to have some at lunch! I did add a can of tomatoes with green peppers and onions, as well as about 1.5 cups of vegetable broth to thin out the texture a bit, to meet my preferences.

Brooklyn Girl's Penne Arrabiata

Awesome! My hubby ate two helpings. It was easy and tasted sooo good with some crusty bread. I didn't think the red pepper flakes made it too spicy, I thought it was just right! Loved it!

I'm Polish, too, and this recipe looks a lot like the ones my family makes (except for the cottage cheese!) And we never fried them in oil....always in much more flavor!!

Very Best Blueberry Cobbler!

This recipe was awesome. I am not a fan of blueberries, I made it to please my blueberry-loving husband. We loved it, the folks at the dinner party we took it loved it...I've been asked to make it again for the next dinner party!
