Outrageous Warm Chicken Nacho Dip

Took this dip to a party last night and everyone raved about it. I tried to use light ingredients where I could (cheese, sour cream) to lighten up the calorie/fat load. Instead of jalapenos, I used a hotter variety of taco seasoning and the Original RoTel and it was perfect for what I was looking for spice-wise. My dip only took about 45 minutes to get hot in my Crockpot. This is my new go-to recipe for anytime I need to bring a dish to anything.

Spinach Lentil Soup

I definitely enjoyed this soup more today as lunchtime leftovers than I did as dinner when I made it last night. Even with the 6-to-2 ratio of broth to water that people suggested, I still feel like this recipe was lacking something flavor-wise...I'm just not quite sure what that "something" is. This is a good base recipe, but be prepared to season it up really well if you're anything like myself and prefer flavorful foods. I think with the appropriate seasonings (perhaps some garlic, for starters), this would be a 4-star recipe.

Middle Eastern Rice with Black Beans and Chickpeas

Wow, I can't believe I made something that tastes so good! Eight servings seemed like a lot, so I halved the recipe. Glad I did because my skillet was almost overflowing! I took the advice of some of the previous reviews and subbed a doubled amount of curry powder for the dried seasonings. I also added spinach that I cut up (I decided to forgo the cilantro and parsley). Also chose 3/4c. brown rice instead of 1/2c. basmati rice as the halved recipe called for. These tweaks resulted in a beautiful dish, so colorful and fragrant! I had no idea what to expect taste-wise, but I'm more than happy with how this turned out. Easily one of my favorite recipes that I've experimented with on this site thusfar. Can't wait to dig into the leftovers for lunch tomorrow!

Maple Salmon with Mushroom Couscous

Delicious! It was nice to be able to make a simple glaze with ingredients that I already had on hand for once. I was a little skeptical of the combo of the soy sauce and syrup, but I'm glad I gave it a try. This would be a 5-star recipe based on how easy it was and the way the flavors came together...except I felt like the salmon was missing something, flavor-wise, that I couldn't quite put my finger on. I think I will try tinkering with the glaze recipe in the future to get it more to my liking.

15-Minute Chicken and Rice Florentine

Overall, a satisfying and filling meal that makes plentiful servings. I did tweak the recipe a bit (more spinach, more chicken, no nutmeg, no cheese, less water, added tomatoes). I found the recipe to be incredibly bland as written, so I seasoned it with paprika, black pepper, red pepper flakes, and cumin - which really made the dish MUCH better. Next time, I will marinate the chicken beforehand, add olives, and use grated parm (like you would find in the pasta aisle). I have high hopes for the leftovers - hopefully the flavors will meld together a little better and it will be even more delicious than tonight! The bottom line: a tweakable filling recipe with plenty of potential.

Fiesta Fry Pan Dinner

I only made minor mods to the recipe: 1 can of nsa corn kernels (instead of frozen) and significantly less of the taco seasoning pack (to keep down the sodium). Also, my bag of instant brown rice only contained 1 cup of uncooked rice instead of the 1.5c. My attempt at this recipe turned out with too much liquid. Maybe another 1/2 cup of rice would have helped? I also didn't feel the flavors melded together well enough, but again, maybe more rice would have helped. I'm hoping if the dish spends the night in the fridge, it will come together better for lunch tomorrow. 10 servings as written would yield pretty small portions IMHO. Overall, an okay recipe but I will definitely make again to hope to improve.

Stuffed Peppers with Turkey and Vegetables

I thought this was a great base recipe! I think the most important mod you can make to this recipe though is to add seasoning to the turkey BEFORE stuffing the peppers. Ground turkey is so bland, but it really comes alive with some salt, pepper, oregano, basil, paprika, and maybe another spice that I'm missing off the top of my head. My fiance and I thought this made a great meal.
