Easy Baked Chicken Cordon Bleu

My husband is definitely not a chef. He really wanted to make dinner and this is what he did. It was yummy and looked super impressive. I only give it 4 because I'd probably want some sort of sauce for the next time I make it. Having said that, the cheese and ham kept the chicken from drying out. We served with mashed potatoes so the sauce wouldn't been great to smoosh all together. If you did make a sauce, you wouldn't need much! Thanks for helping to make my hubby feel like a pro!

Lola's Horchata

I've since made it with white rice and dare I say I preferred the taste with the brown rice. Also, I used the cinnamon sticks and just blended them in the beginning with the rice in the blender. Delish!

Cranberry Muffins

These are delish! I add equal parts cinnamon and nutmeg to the topping. Kind of a lot of ingredients for muffins but they def. don't disappoint. I love fresh cranberries. Great for breakfast!

Baba Ghanoush

This was soooo yummy!!! I'd heard about this stuff but never tried it. I'm a hummus regular but from now on, I think she will be my hummus. The only thing I changed was I roasted my garlics along with my eggplant because raw garlic is a bit intense on the breath. Also, I ate it immediately instead of waiting. The next day the garlic flavor had def. intensified so maybe that is what the fridge time would do? Either way, loved it and thanks.

Peanut Butter Noodles

My husband has a peanut allergy so I used tahini (sesame paste) instead of the p.b.. I dont' know how many people with a peanut allergy will be looking at a recipe with this title but it was delish! I don't normally have Udon noodles on hand and cooked this last minute but I just used the pasta I had on hand which turned out to be rotini. Random I know but if it was yummy with that, I bet you pretty much could use any pasta and have it turn out well. Oh and I just used some normal onion b/c it was what I had on hand. I LOVED THIS DISH!

Black Bean and Couscous Salad

Yummy! I only had one can of black beans and I thought it was the perfect ratio. This is a total "girl" salad. My husband thought it was "ok" and I think he called it "interesting" and my 4 yr. old said it was "weird" and only sort of ate it--even after I tried to say this is what Jasmine and Aladdin eat. However, I LOVED IT so I'm rating it on what I thought. Great for a lady's luncheon or make a bunch and eat it all week like I did. :-)

Good Old Fashioned Pancakes

Yummy. The only thing was that the batter was too thick as written. I had to add a little more milk to have a good consistency. This is a great pancake recipe base. The add-in possibilities are endless! Thank you.

Gingerbread Waffles

These were super yummy. I would have given 5 stars but my ginger was old so it wasn't too gingery but I bet with normal ginger it would be even more delish. I doubled the recipe and I'm glad I did because it didn't yield too many waffles (probably like 3 belgian waffles with the single recipe). I didn't double the molasses though b/c I think molasses is so strong (I don't have a lot of molasses exp. here) but maybe it is b/c I have "cooking molasses". Our family ate it with applesauce and whipped cream on top. Such a great combo of flavors. Next time I'll try substituting a bit of wheat flour or wheat germ in to make a bit more nutritious for a dinner.

Dulce de Leche

This was a fun recipe because it made me feel like I was doing a science project or something. It's cool that all this happens just from milk! I changed the recipe and just made it from 2 c. of milk and it probably reduced to a little over 1 c. of dulce just perfect for a middle layer on a cake. I added vanilla extract after I took it off the heat. I didn't think the ice bath was necessary b/c it made the dulce harden too fast. Super yummy and easy. Only took about 40 min. I stirred occassionally in the beginning and then when it started to brown, I would stir and come back every min. or so.

Tofu Parmigiana

This was so yummy! I used 2 big tomatoes instead of the tomato sauce and then cooked a pkg. of penne and jar of tomato sauce on the side. I layered the penne mixed with tomato sauce(added some veggies, seasoning and a bit of brown sugar), put the 3 T. of Parm. cheese on top of that, then the tomato/garlic/basil mixture on top of that, topped with tofu and then the cheese. I loved the texture of the tofu with the cheese all melty on top. I struggled with the crumbs sticking to the tofu but I just sprinkled the remaining bread crumbs on top of the tofu and it all turned out so freaking delicious! Thanks for a great dinner.

Harvest Rice Dish

This was yummy. Usually I think anything with berries, nuts and then something traditionally non sweet like onions makes for a total "girl" food and I was both surprised and delighted that my husband loved it. I accidentally doubled the rice in the beginning so we had lots of leftovers. I added zuchini just because I had them and it was a nice addition. I also used just brown rice. Fun flavors and very hearty. Thanks for the recipe.

Raw Apple Cake

Delicious! I wonder if you could mess this recipe up. I used some apples off my tree, tart and delicious. I didn't have any powdered sugar so I used normal sugar for the frosting and it was still great. I just sort of ballparked the sugar conversion. I also just chopped the apples big and then noticed it said to dice them small. Oh well. It turned out so yummy and my family loved it. Now I'm just waiting to do some time on the treadmill before I make it again. Thanks for sharing!

Slow-Cooker Chicken Tortilla Soup

So yummy and super easy! Everyone LOVED it. Instead of making my own chips, I cut up corn tortillas and put them in the last 1/2 hr. I also added the cheese the last 1/2 hr. It made it super hearty and filling. Will definately make again.

Teriyaki Chicken Pizza

This was surprisingly delicious. A great mix of flavors. I usually avoid making pizza because I hate dealing with dough and yeast but I just used a boboli crust(as suggested by another) and fresh pineapple. Will definately make again. Yum.

Florentine Curried Chicken

This was really yummy. I did it in my crock pot instead and just combined all the ingredients. I also chopped the chicken up and served it over Basmati rice. It was a fast/easy Indian type meal. I will make it again. I omitted the cheese garnish. Fun/easy variation.
