Dish Pan Cookies

Yum yum yum....these cookies are delicious and the texture is perfect (crisp on the outside, soft on the inside). The cookie dough was irresistible and I had to fight off my kids and husband from the bowl.

Cajun Chicken and Sausage Gumbo

Excellent authentic cajun gumbo recipe. I used a smoked chicken (because I had one on hand) and it gave it a nice, faint smoky flavor. Be sure to cook the roux thoroughly and get it good and dark.

Swiss Chicken Casserole II

This was very easy and delicious. I cooked it in the crock pot and it turned out perfect! The chicken breasts were tender and the stuffing was crunchy on top. The Swiss cheese gave it a nice flavor.

World's Best Lasagna

It was good...BUT...watch out for the salt! I checked, and double checked before I added the tablespoon of salt the recipe called for. It was really salty! Not inedible, but really salty. I will make it again, with half the salt or less. I also had sauce leftover.

Very good! We like our salmon very moist and so I only cooked it for 35 minutes, 45 would have made it to dry for our tastes.

Chicken Andouille Gumbo

Excellent recipe. We love cajun cooking but there's a lot of fat in this because of the oil. I have learned to brown flour on a cookie sheet in the oven until it's nice and dark and flavorful, and it adds just as much roux flavor as a traditional oil/flour roux made in a skillet. I also omitted the tomatoes, we prefer our gumbo to not have any. You can also boil a few uncracked eggs directly in the pot about 10 minutes before serving and then crack and peel the hot eggs and eat with the gumbo, really yummy and very cajun!
