Creamy Avocado-Ranch Dip

I made this for the Super Bowl and we all enjoyed it. I served it with lime tortilla chips and some garlic pita chips. Both really added something to the dip. Of course, I also ate it with regular tortilla chips & it was just as good. I also spread some of the leftovers on my turkey sandwich - it was delicious!

Parmesan Potato Soup

I thought this soup was fantastic. The Parmesan gave it an extra bit that you usually don't get in other potato soup recipes. The only reason I didn't give this a 5-star was because the bacon in the soup didn't re-heat well. It became soggy and chewy for leftovers.

Caramelized Onion and Horseradish Smashed Potatoes

These are definitely worth the calories! They were creamy and delicious. I served them with pork chops and then with a Dijon-shallot chicken cutlet. Fantastic!

Black Bean and Salsa Soup

We thought this was tasty, but not a stand alone meal - we ate it with a nice salad and bread. I found the low-sodium beans and broth as allrecipes suggested, and I rinsed the beans well. I also used a nice chunky salsa.

Mushroom Pork Chops

I thought this was an easy and quick dish. I would definitely make it again. A couple of notes: (1) I browned the beef and then removed it from the pan while I cooked the onion and mushrooms. The pork rested on the plate and when I added it back into the pan, I also poured the juices with it. (2) I used a meat thermometer to monitor the meat. I don't think I had to cook it the entire 20 minutes. I used a boneless chop that dries out faster than a bone-in. I let it go to 155 and it got up to the 160 when I removed it from the heat.

Not great, not bad. I served it over brown rice and there was enough "sauce" to keep it moist. It just wasn't one of my favorites.

Brazilian Fish Stew

Italian Meatball Sandwich Casserole

My husband and I loved this recipe and I was able to make it ahead of time and then have him throw it in the oven at the last minute. I did add an egg to the meatballs to make it hold together better, but it was wonderful.

Phyllo Turnovers with Shrimp and Ricotta Filling

They were good, but a lot of work. I couldn't get them to look like they were in the pictures so that's why I didn't give them 4 stars. My husband & I loved them, but I would hesitate to make for company because they didn't come out "pretty".
