About this Cook
I am a Registered Nurse that works midnights, so alot of the time I don't have alot of time to cook, so I look for easy, comforting meals...and try my darndest to stay more on the healthy side with the recipes, even though I LOVE potatoes and pasta dishes.
My favorite things to cook
I like to experiment on my days off with new recipes. Sometimes they turn out great, other times they don't. My husband had been a cook for years professionally, so I have someone to assist me when I get stuck and don't know what I am doing in the kitchen! My favorites to cook tend to be deserts....and slow cooker meals.
My favorite family cooking traditions
My family likes to cook alot curing the holidays, especially Christmas. Every year me and my daughters make cookies and candy. We have alot of laughs, flour and sugar everywhere, but it is fun. Lately I have been wanting to try some French, Finnish and Irish recipes....old recipes handed down through the family.
My cooking triumphs
For me, making dinner that dosn't burn, and the kids will actually eat is a triumph for me! I just like the cooking and baking and seeing how things just come together in the end and seeing my family enjoy the finished product (and still have a house and fingers left!).
My cooking tragedies
A couple of things I have tried didn't turn out as planned. I always have a picture in my head as to what the food will look and taste like...and then get dissapointed when it dosn't turn out the way I expect it to. My worst meal ever was making leg of lamb without a clue as to what I was doing. I turned out horrid, so we had pizza on Christmas day that year!

Italian Herb Bread I
This turned out beautifully. I was looking for a good made from scratch recipe other than white bread, and this was perfect. I added a few thing though after the first rising....I put about a cup and a half of shredded cheddar in the dough, and split the dough in half. In one of the halves I put about 2 tablespoons of chopped jalopenos. I baked both loaves in the oven on our pizza stone....and then added more cheddar to the top when I was done. Turned our really good!

Chicken Enchiladas V
These are sooooo good! Can't stop eating them and I have been thinking about making more ever since I made the first batch. I used a few of the suggestiongs, used taco seasoning, added salsa, and doubled the sauce.....Loved them!!!

Mark's English Sausage Rolls
Can't even find the words to describe these other that WOW! My husband has made these a couple of times since finding the recipe, and these little things were the only thing I craved on Christmas day. Absolutly wonderful. Need to get good quality sausage, and you can roll up the meat without cooking it first. If you use cheaper/greasier sausage precooking the meat seemed to help. We have tried it both ways, and both turned out great.
