Easy Roasted Red Pepper Hummus

This recipe is DELICIOUS! I will be making it weekly to bring into work for a veggie dip :) I stuck to the recipe and DID NOT use olive oil (trying to cut out fat) and it was delicious-- creamy, smooth... I won't buy hummus at the store ever again!

Spinach Quiche

I used 4 eggs instead of 6, a splash of milk, and no butter... it turned out great and had a lot less fat!!! Thank you for a great recipe!

Sweet Potato Pie II

So good! I accidentally forgot to add the butter-- although it was much more airy than traditional pumpkin or sweet potato pie, it was still DELICIOUS! I think I might 'forget' to add the butter the next time I make it to cut back on the fat :)

Million Monster Cookies

Delicious! I, like many others, halved the recipe and still ended up with a lot of cookies. I baked 1/3 of the batter and froze the rest for later. Since the recipe called for 9 eggs, I was unsure whether to use 4 or 5 after halving the recipe... I ended up using 5 and it turned out great! I also used Hershey's Kissables instead of M & M's and they were yummy!

Banana Nut Bread II

I used 1 cup whole wheat flour and 1 1/2 white flour and the bread turned out great. I didn't use nuts so my version was a little healthier because of the whole wheat and had a little less fat in it, too. Yum !

Sarah's Applesauce

Yum! I didn't use any sugar because I was making this for my infant daughter, and it was still pretty sweet. (I used Macintosh apples) I sprinkled some cinnamon on it for my husband and me and we both thought it was great! My baby loved it, even without any sugar or cinnamon! :)

Linda's Monster Cookies

These are sooo good! You can add anything into this batter and they're still delicious (raisins, pnuts, walnuts, etc) I've never made a combination that wasn't delicious! They freeze really well, too... just pop them in a freezer bag so you don't have to worry about them getting stale. You can eat them frozen or pop them in the microwave for a few seconds. Delicious!

I omitted the oil because I wanted to go for a lower fat version and it was a little bland. Next time I would add more garlic to compensate for the lack of oil. Great recipe though, and without all the oil, it's pretty healthy!

Caramel Brownies II

AMAZING! They are very very gooey, I chill them to make them easier to cut and to serve. Everybody always raves about these brownies-- well worth the time it takes to unwrap the caramels :)

Buttermilk Pancakes II

These pancakes are great, and they freeze well, too. After baking a big batch, I store them in ziploc bags (3 or 4 to a bag) and throw them in a freezer. Then I just pull one bag to warm up for my breakfast :)
