Turkey Veggie Meatloaf Cups

These are great, very diet-friendly, and also works well when made as a regular sized 9x5 loaf. I go overboard with veggies and add in lots more than the recipe calls for (finely minced carrots, zucchini, broccoli).

Banana Cream Pie I

I used 1/2 banana extract and 1/2 vanilla extract for more banana flavor. Like others, I did not bake this pie, but rather, let it sit out to cool for about an hour, then put in the refrigerator. Filling was a little more solid than I would've liked, but tasted great. I probably let it cool too long before refrigerating. I plan to make just the pudding again to use as cake filling.

Coconut Cream Pound Cake

Delicious! Very coconutty, and very dense. I made jumbo cupcakes (baked for 28 minutes at recipe temp) and they were great. Frosted with "Study Whipped Cream Frosting" from this site, using coconut extract in place of the almond. Followed other reviewers' suggestions for this: used 2 cups sugar, 3 eggs worth of egg substitute. Will definitely make again for all my coconut fans.

Health Nut Blueberry Muffins

I took some creative liberties (but within reason): added approx. 1/2 cup shredded/minced carrots, used 1 cup wheat flour and 1/2 cup all-purpose, did not use nuts, added 1/2 tsp cinnamon, 1/4 tsp allspice and 1/4 tsp nutmeg as suggested by "sinsofangels", used flax meal instead of wheat germ, broiwn sugar instead of white, applesauce instead of oil. Hubby would like oil instead because they stuck to the paper liners. Taste was great and healthy. Might try adding white choc. chips next time.

Whipping Cream Pound Cake

Like others, I doubled the extracts and used 1 TBSP less per cup of all-purpose flour. Halved the recipe and made mini-cupcakes. If you do this, be careful not to overbake! Definitely use the toothpick test. Mine took around 20 minutes. Flavor was good, very almond-y, much like a butter cookie. Appearances are not so great; cupcakes were flat and didn't hold shape very well. I frosted with the frosting recipe from "Wednesday Cookies" off this site. Good recipe, but will make as bundt as directed next time. *NEXT TIME IS HERE* Cake turned out PERFECTLY. I didn't have almond extract, so I tripled the vanilla. Delicious, light and beautiful! Didn't frost it and was still very flavorful. 5 stars!

Momma's Wine Cake

I used Merlot and the cinn/sugar mixture suggested by others ... delicious! The taste is perfect, light and airy, super-moist, and not quite detectable as a wine flavor. Sprinkled cinn/sugar/powdered sugar mixture on top too. Would probably be really good with a bit of vanilla glaze. yummm!

Old Fashioned Coconut Cream Pie

omg .. This was THE BEST coconut cream pie I've ever made, and super easy, too! I'll never have to stock up on the instant pudding mix again! The only substitutions I made were using a whole package of the fresh frozen coconut in the filling instead of the sweetened cake-mix-aisle stuff, and used 1 whole can of coconut cream with enough half-n-half to make 3 cups. I had extra filling but it was delicious as a pudding for dessert. Definitely make your own fresh whipped cream (1 cup heavy whipping cream, 1 tablespoon sugar, 1/2 tsp vanilla). You can find the fresh frozen coconut in the freezer section of Asian grocery stores.

followed recipe exactly. frosted with canned chocolate frosting when cooled. fiancee said it tasted just like a "home-run pie" .. you know, those pies from the grocery store that sell 10/$1.00. yummmmmmm!

Fruitcake Cookies

Having never had "real" fruitcake, I have to say these cookies make me want to try it! Even non-fruitcake fans said these cookies were great, and one person even suggested calling these something different, since the word "fruitcake" just doesn't appeal to many people. I'll be calling then "holiday coookies." These made the cut and are going in the Christmas gift baskets!

Donut Muffins

A big hit with everyone! I coated half the batch (I got 24) with another reviewer's vanilla icing and some sprinkles and coated the other 12 with the cinnamon sugar mix. People said the vanilla iced ones tasted just like sprinkle donuts!

Cinnamon-Roasted Almonds

Oh my my ... these are FABULOUS. Definitely took the advice of others and doubled the coating mixture ingredients. Also, bake for an hour and stir, then stir every 15 minutes for another 45 minutes. These are a godsend for those of us trying to cut back on sugar .. Splenda works great with these. I make these just about every week!

Crustless Spinach Quiche

Great for the low-carbers out there! This recipe is so versatile. I usually add in some minced carrots and cubed ham, use a 2-cup bag of shredded colby-jack cheese (our favorite), use a full 16-oz bag of thawed and squeezed frozen chopped spinach. If needed, I'll add more egg (Eggbeaters and egg whites are great, too), and will just shake in extras of garlic powder, salt and pepper. Onion powder also works. We eat this weekly!

Grandma Minnie's Old Fashioned Sugar Cookies

BEST CUT-OUT RECIPE EVERRRR! This is the first sugar cookie cut-out recipe I've tried where the dough rolls out well and it doesn't poof up while baking, leaving me with distorted blob-shaped cookies. I did have to refrigerate the dough for about 20 minutes because it was too sticky to roll (sticking to parchment paper even!) but I didn't change the proportions at all. I might add more vanilla next time, or maybe all it needed was some icing (I only sprinkled with colored sugar and baked). I felt GREAT about this recipe and am looking forward to making cut-outs for the holidays! Grandma Minnie rocks!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I've been making the same carrot cake for ages and decided to try this one solely because I had white choc. chips to use up and this frosting recipe was intriguing. The results were DELICIOUS. Hubby has requested this for his bday cake. I did not put the nuts into the batter, just put extra on the frosting.

Chocolate Cavity Maker Cake

A big hit with everyone I've served these to! The one big recommendation I'd make is to use chocolate liqueur instead of coffee .. the chocolate just makes it! Trust me, no need for icing or frosting, a simple dusting of powdered sugar and fresh rasp- or strawberries makes it decadent and fancy. (I made this in mini bundt pans and they were adorable!)

White Chocolate, Chocolate Cookies

Hubby said thse cookies were awesome (I'm on a diet, so he's the official taste-tester). I followed another reviewer's (PinkPenguinStar) suggestion and used dark cocoa powder plus unsweetened cocoa powder, semi-sweet mini choc chips plus white choc chips, some walnuts and added a pinch of salt and some vanilla extract. I also did half baking powder and half baking soda. These baked perfectly (if a bit lumpy from all the add-ins) at 8 minutes in my oven. They do look a bit undercooked, but let them sit on baking sheet for 5-7 miunutes before moving them to cool on a wire rack and they are perfect. I halved the recipe and still got 28 cookies using my standard size cookie scoop.

Glazed Apple Cream Pie

I used 4 apples and an extra 1/2 tsp of cinnamon and it was delicious! The custard is a hard sell for some die-hard traditionalists, but the taste is fantastic!
