Dish Pan Cookies
Great cookie recipe that's easy to make any time because you don't need to wait for butter to soften! I used crushed Corn Chex cereal and omitted the pecans. Everyone loved these. The cereal adds an interesting crunch to the cookie. It took longer for mine to bake, more like 18-20 mins and I was concerned they wouldn't set up because of the oil. But after they cooled, they were fine. I used parchment paper so it was easier to re-use the cookie sheets for each round of oven time (I can only bake one sheet at a time in my tiny oven). I plan to make more and will sandwich ice cream between two cookies for even more yummy fun.

Sugar-Free Frosting
Wow, what a great sugar-free frosting! (Especially after you've tried that nasty stuff in the can!) I used a large box of choc. pudding mix and 1 1/3 C milk. It didn't hold a swirl as much as I would've liked, so I think I'll use 1 1/2 C milk next time. But the taste is fantastic and it's so easy to make! I had leftovers, so I'm debating serving it as a mousse, or maybe freezing it to make sugar-free fudge pops. yum yum! Awesome recipe!

Grandma Minnie's Old Fashioned Sugar Cookies
BEST CUT-OUT RECIPE EVERRRR! This is the first sugar cookie cut-out recipe I've tried where the dough rolls out well and it doesn't poof up while baking, leaving me with distorted blob-shaped cookies. I did have to refrigerate the dough for about 20 minutes because it was too sticky to roll (sticking to parchment paper even!) but I didn't change the proportions at all. I might add more vanilla next time, or maybe all it needed was some icing (I only sprinkled with colored sugar and baked). I felt GREAT about this recipe and am looking forward to making cut-outs for the holidays! Grandma Minnie rocks!
