Apple Breakfast Bread

Absolutely delicious. I agree with naples34102, its good with the butter, but be prepared for a drier bread. I added a few T veg oil to the batter and it was perfect. I didn't find any need to substitute brown sugar for the white, it turned out great. I buttered the glass pan and even dusted it with a little sugar too. I used two large granny smith apples and grated them directly into the batter. My kids, friends, husband and myself have devoured this easy, tasty, moist bread time after time, and it makes the house smell absolutely fantastic. Awesome recipe, thanks Jennifer!

Chicken Enchiladas II

This was a good base recipe as most have said, not "authentic", but a good Americanized version, especially if you like mild, creamy, cheesy enchiladas, which my family does. I doubled the recipe, added extra seasonings as suggested and to taste, used boiled legs, thighs and breast for meat variety, and then added an extra can of crm chicken and milk to stretch the sauce. Adults liked it, could build up the spicy with other toppings, kids liked it because it was mild enough and easy to eat. Served with spanish rice and sweet corn cake and it was a real hit.

Dill Vegetable Dip

This is a good,dependable,"count on me" veggie dip. First time making it, I used dried onion flakes instead-about 4-5T. Everyone loved it, and it tasted very fresh. The second time making it, I didn't have onion or flakes, but used about 2 tsp onion powder and added a little lemon juice. Just as good! For a little zip, you could add a little hot sauce.

Whit's Chicken Enchiladas

Really great recipe, and like others said, a great one to build on if you want more kick. I actually had slow-cooked a pork roast with onions and potatoes, so I shredded all of that and used it for the filling with cheese, instead of chicken. It was so incredibly good. I made it for a party, and people took leftovers home. I would definitely add more green chiles next time, but since we were feeding kids too, it was nice and mild for them. Served with Mango Madness Salad...big hit.

This was a great recipe. I have the recipe for this soup from a well known italian restaurant in my city, and this was better, I think. The fresh herbs and spinach made a huge difference. I made it yesterday, had it for dinner, and then froze the leftovers in freezer bags to use later. I ended up giving most of it away to friends and had it with a couple friends for lunch today, and they raved about it. Before freezing, I added the noodles and extra water, about 1/2c per gallon freezer bag, and I was afraid this would affect the taste, but it didn't. I gave it 4 stars because overall, it could use a little stronger flavor, and it could use a little extra broth(very hearty and thick). However, it really was good, easy to modify(flavor), and easy to make with my 3 year old daughter. Good job!
