Balsamic Chicken with White Beans and Spinach

What a wonderful dish. I did add onion and mushrooms to the garlic. I cut the balsamic vinegar with chicken broth, probably half and half because I know my husband doesn't like much vinegar. He loved it and he's not fond of any chicken breast meal. A great recipe and it leaves room for you to add your own touches.

I made this for dinner last night. Both my husband and I loved the blend of flavors. He requested I add it to my rotation of menus. I'm looking forward to having the leftovers for lunch.

Cream of Asparagus Soup I

Wonderful soup. I used half olive oil and half butter also half chicken stock and half water. Otherwise I followed the recipe. I will be making this often as asparagus season is just beginning. Thanks for a great soupl

Great Garlic Beer Steaks

I have been using this marinade for about two years now. We really love it. I finally remembered to come in to review it as I have steaks marinating in it right now. I make the marinade just as the recipe says, we love the taste of the oyster sauce.

Penne a la Vodka II

Wonderful!! I took the advice from others and used diced tomatoes, some red pepper flakes, and added mushrooms. I used the heavy cream. It was great. My husband loved it. It is a keeper.

French Silk Chocolate Pie II

My first try at a French Silk pie and it turned out wonderful. I read the reviews and increased the cocoa to 8 Tbsp which was just right for us. I had no trouble getting it to set up. I did have to beat it a long time to get the sugar to incorporate. It was well worth the time.

Busy Night Turkey Taco Soup with Avocado Cream

I just made this tonight with our leftover turkey from Thanksgiving. Very very good. I made one substitution. I used black beans rather than chili beans. My husband is not a big fan of TexMex food but he also liked it. Thanks for the easy recipe

French Dip Sandwiches

Excellent recipe. The beef was wonderfully tender and moist. The only reason I gave it a 4 instead of a 5 it was a little to much soy sauce for us. Next time I would use 1/4 cup of soy sauce and 1/4 cup of beef broth but otherwise it was very good.

Honey Mustard Grilled Chicken

My husband usually doesn't like chicken breasts. His comment on this one was that it was "moist and flavorful" that means it was a hit. The only thing I did differently was to baste the chicken breasts with the marinade about an hour before I put them on the grill. I will be making this again.

Herb Rubbed Sirloin Tip Roast

This is the best. I have struggled to make a good sirloin tip roast. They have always been dry. I followed the recipe although I substitued tarragon for the oregano and thyme ( a personal preference) baked until the temp was 142 F after it sat for 15 minutes it was at 146 F. A lovely medium rare. Was wonderfully juicy. My husband loved it. Will definately make it again.

Simply Lasagna

I'd been looking for a lasagna recipe that I didn't have to cook the noodles. This one turned out great. I jazzed it up abit and added onion, garlic and green pepper when I browned the meat. The noodles came out nice and tender.

Garlic Roasted Chicken

Excellent roasted chicken. Very moist and tender. I followed the recipe exactly but used half chicken broth and half wine. I did have to add quite abit more liquid to the roasting pan. The gravy was very good. I will definately make this again.

Greek Salad

A wonderful salad. My husband loved it and he's not always fond of salads. I used olive oil instead of vegetable oil. I used the kalmata olives and they gave it a wonderful flavor. I made up just a little more of the dressing as there wasn't quite enough to coat the greens.
