Cheeseburger Pasta

I didn't have any tomato soup so I used a small can of tomato sauce and a can of drained diced tomatoes. Still turned out pretty yummy. Might add a little seasoning to it but otherwise good. Very easy and quick!

Cashew Crusted Chicken

Yummy and super easy to make! This is going to become a regular on our menu! I am surprised at those who said it was messy. Duh, whenever you coat chicken in anything stuff may drip on the counter! My only recommendation would be to use a food processor to crush the cashews, it just helps to have them as small as possible when coating the chicken. Also I made a side dish of broccoli and drizzled the leftover apricot sauce onto it. Yum!

Orange Roughy Parmesan

This was SOOO delicious and incredibly easy. My 5 year-old son helped me make it. We loved it so much that we wanted to eat the rest before my husband came home from work! YUMMY!

South Beach Peanut Butter Cup

So yummy and satisfying if you are a chocolate/peanut butter fan! I'm a little nervous about it being 300 calories per serving, so I would probably only use 1TB of PB and cool whip.

White Bean Soup

Tasty but it was too watery. Next time I would only blend 1/4 of the soup instead of half. I added a bunch of torn up wheat bread to my bowl to make it thicker. Otherwise pretty tasty.

Eggnog Cake

Like other reviewers suggested I used egg nog instead of milk and vanilla extract instead of rum. I also carefully watching the baking time and at around 50 minutes the tooth pick came out clean all over the cake so I took it out of the oven. However after the cake cooled it practically crumbled when I cut it, and yet there were still mini lumps of flour mixture inside the cake despite mixing thoroughly. I also didn't think it tasted much like egg nog even though I used it! Sorry, too bland and time consuming for a not-so-great result.

Spinach and Tortellini Salad

This is PHENOMENAL! One of my favorite salads to make in summer. I must have made it half a dozen times. I did omit the olives because I don't care for them but I didn't miss a thing. To make it look even prettier I would use multi-colored tortellini. YUMMY!!!

Chocolate Truffles

Easy to make and very rich tasting. People will think you slaved all day! The only thing I would mention is to stir the mixture while it's firming because after two hours there was still some moisture in the bowl from the condensed milk. It really needs to be completely firm before rolling otherwise it's too wet. It can be a bit difficult to spoon the mixture out and can be a little messy depending on what toppings you use. I had a wet paper towel on hand to clean off in between coatings!

Butterscotch Drops

Excellent tasting, very easy to make. The only thing I would mention is that the mix is slightly runny when it's mixed and you drop the blobs on the cookie sheet. I wasn't sure they were going to stick together but once cooled they came out fine. They were somewhat difficult to get off the cookie sheet though, several of them broke when I scraped them off. Maybe spraying the cookie sheet with PAM first would help? Otherwise great!
