Cashew Crusted Chicken
Yummy and super easy to make! This is going to become a regular on our menu! I am surprised at those who said it was messy. Duh, whenever you coat chicken in anything stuff may drip on the counter! My only recommendation would be to use a food processor to crush the cashews, it just helps to have them as small as possible when coating the chicken. Also I made a side dish of broccoli and drizzled the leftover apricot sauce onto it. Yum!

White Bean Soup
Tasty but it was too watery. Next time I would only blend 1/4 of the soup instead of half. I added a bunch of torn up wheat bread to my bowl to make it thicker. Otherwise pretty tasty.

Eggnog Cake
Like other reviewers suggested I used egg nog instead of milk and vanilla extract instead of rum. I also carefully watching the baking time and at around 50 minutes the tooth pick came out clean all over the cake so I took it out of the oven. However after the cake cooled it practically crumbled when I cut it, and yet there were still mini lumps of flour mixture inside the cake despite mixing thoroughly. I also didn't think it tasted much like egg nog even though I used it! Sorry, too bland and time consuming for a not-so-great result.
