Vegetable Pasta Salad II
I am always looking for Vegetarian recipes for my Veggie daughter. My family loved this. It was fairly easy and quick to make, although I highly recommend leaving enough time to serve it cold. I envision changing the vegetables to whatever is in season. I used a red pepper and red onion because that is what I had on hand. I had to make a homemade dressing because my Italian has anchovies (not vegetarian!). Will definitely make this again!

Tilapia with Tomatoes, Black Olives and Corn
We loved this recipe. I used canned diced tomatoes with basil, garlic & oregano. Unfortunately I didn't have corn, will try next time. At first I thought more liquid should have cooked off (by leaving uncovered), but it turned out more like a stew. I served it in bowls topped with feta and pine nuts. Very easy and delicious!

Three Berry Pie
I LOVE this recipe! Raspberries are so expensive I alter the amounts. I also use a deep dish pie plate, so I increase the amounts of berries and sugar/cornstarch. I use: 2 1/2 cups fresh strawberries, 1 cup fresh raspberries and 3 1/4 cup fresh blueberries. I also increase sugar to 3/4 cup and cornstarch to 4 1/2 tbsp. No problem with runniness, as long as it has several hours to set. I have made this recipe many times, it always tastes great!
