Breakfast Casserole III

The whole family enjoyed. A small miracle! I used o'brien potatoes and reduced fat sausage. I also subbed some egg whites for the whole eggs. Came out great!

Pork Patties Oriental

I made this exactly as the recipe stated, except I made a lot more smaller patties. I thought it was just okay and my 4 year old wouldn't eat it at all. My husband really enjoyed it though.

Seven Layer Tortilla Pie

The family loved this, especially my super picky 3 year old. I used whole wheat tortillas. I mixed the pinto beans with very little salsa, because my son thought it was too spicy. I mixed the black beans with roasted corn from Trader Joe's. It has a mexican kick to it, and was perfect. I also added some cumin, and left out the cilantro and salsa. When I layered the pintos I added enchilada sauce from trader Joe's (the best!) to cover the tortilla, then a layer of chopped black olives and the cheese, then a tortilla and the black bean/corn mixture. I repeated and added enchilada sauce every time with the pintos. I poured more enchilada sauce over the top to cover all visible tortillas. I used shredded 3 cheese blend. It was so good! I've never seen my son eat more of anything, and he had leftovers the next day.

Becky's Oatmeal Carmelitas

These are very rich and delicious. They were my new cookie to try for Christmas this year. My husband loved them! I did everything just as the recipe states. I did leave the carmel on the oven, which was a little warm, while I cooked the crust. This kept the carmel nice and smooth, so it was easy to drizzle when the time came.

Best Ziti Ever

Very good and relatively easy to make. I used Trader Joe's Italian chicken sausage with red wine and cheese, which was awesome. I used slightly less mozzerella, and I didn't have italiain seasoning, so I just threw in some basil and oregano, but didn't sprinkle any on top. My 2 year old and husband enjoyed this.

White Chocolate and Cranberry Cookies

These are great! I subbed almond extract for the brandy. I made two batches. One I cooked for less time, they seemed doughy, and the others I cooked a little longer, until they browned around the edges. the doughy looking ones were better.

Chicken Tortilla Soup I

This was okay, but a little bland. I added some cumin and salt and extra chili powder, which helped a little. In all fairness, I didn't have green chiles, which is why I gave this a 4 instead of 3. I did use the hominy, which I found in the canned veggie aisle, right near the corn. It has a chewier texture than corn, and did sort of taste like a corn tortilla! It was a nice, hot, quick meal on a busy night, just not anything we raved about. I probably would just make chili instead next time I'm craving something like this.

Chicken and Biscuit Casserole

This was great! Dh called it perfect comfort food. I followed the recipe exactly, except I cheated and used a can of 10 biscuits. Next time dh asked me to use 2 cans. I also poached the chicken the day before, and used the resulting broth in the recipe as well. Just boiled some water in a large pot with a quartered onion and some crushed garlic cloves. Added the chicken breasts, partly covered the pot, and simmered for about 10 minutes. The chicken shreds up really easily then, and the broth is light and perfect fot casseroles like this one. We will definately make this again!

Garlicky Summer Squash and Fresh Corn

Very yummy and quick. I used 4 cups of zucchini, since I didn't have yellow squash. I used homemade chicken broth and also subbed light butter. I didn't use parsley; just some salt and a little cayenne pepper. DH and I ate this ALL up!

Easiest Teriyaki Marinade Ever

Wow, this was so easy and soooo good. I left out the cinnamon since my dh hates it and added a lot more fresh garlic. We marinated the chicken we used it on for a couple hours and broiled it. I had no idea teriyaki sauce could be so easy!

Granola Bars III

These are great! I subbed whole wheat flour for the all-purpose and for the wheat germ. I also eliminated the nuts and added chocolate and butterscotch chips. I'd definately recommend trying that. I used slightly less oil. I also recommend cutting while warm; it is very difficult when they have cooled.

Layered Chicken and Black Bean Enchilada Casserole

This is so good! Hubby and I both loved it. I used leftover grilled chicken, which made it so easy. Lightened it up a little with low fat cheese and sour cream (which I mixed together per other reviews). I also added some chili powder and tabasco chipotle to the chicken mix, and used whole wheat tortillas. Made during the day, and it still cooked up perfect in the specified time.

Pistachio Fluff Fruit Salad

Very easy and yummy. I eliminated the bananas, because I thought they'd get too mushy. I also used an 8 oz tub of fat free cool whip rather than 10 oz. My husband and I both enjoyed this.

Stuffed Acorn Squash

Yum! I haven't had acorn squash since childhood, and I didn't like it then! I thought I'd try it again - I left out the butter and brown sugar, since I didn't think they would pair well with the stuffing. Like others, I mixed the stuffing mix and other ingredients in a bowl prior to filling the squash halves. The squash was tender and perfect after 45 minutes. I'll make this again.

Quick Calzones

This was fast and pretty good, but the logistics were off as far as preparations go, and this is clearly not anything like an authentic calzone. We used one can of crescent rolls to make 2 calzones. We filled them with veggies and cheese, and had a hard time sealing them. I thought they would be oozing out all over the baking sheet, but they actually didn't. We also made our own pizza sauce instead of using the sauce in the recipe. I would make these again if I had the ingredients on hand, and needed something quick, but not as a means to fill a craving for a calzone.

Pasta Bake

This is a great, quick dinner. I used ground turkey, low fat cheese and whole wheat pasta. I added a few garlic cloves in with the onion, and added plenty of basil, oregano and a little black pepper. I will definately make this again.

Basic Cheese Polenta

Next time making this I would use a smaller loaf pan. I used a 9x5, and the slices of polenta were very short and thick. When I broiled them for a different recipe (polenta and roasted vegetables) the middles stayed a little too soft. I also definately reccomend adding garlic powder or salt or other spices for extra flavor. Although this was a new taste and texture for us, my husband and I both liked it, and will try it again with modifications.

Polenta with Roasted Vegetables

We liked this, and it was definately a change from the usual. I used the basic cheese polenta recipe from this site, instead of buying premade polenta. The polenta was only okay, but that may be due to a problem with the other recipe that I had. The vegetables were fantastic! I subbed baby portabella mushrooms for the peppers; used a lot of zucchini; and took the advice of another reviewer and added a couple garlic cloves. I kept the cloves whole, and then pressed them at the end of roasting and stirred them back in. I would make this again, after playing with the polenta a little bit. It's nice to have another meatless option that my husband and I both like.
