Breakfast Casserole III
The whole family enjoyed. A small miracle! I used o'brien potatoes and reduced fat sausage. I also subbed some egg whites for the whole eggs. Came out great!

Pork Patties Oriental
I made this exactly as the recipe stated, except I made a lot more smaller patties. I thought it was just okay and my 4 year old wouldn't eat it at all. My husband really enjoyed it though.

Seven Layer Tortilla Pie
The family loved this, especially my super picky 3 year old. I used whole wheat tortillas. I mixed the pinto beans with very little salsa, because my son thought it was too spicy. I mixed the black beans with roasted corn from Trader Joe's. It has a mexican kick to it, and was perfect. I also added some cumin, and left out the cilantro and salsa. When I layered the pintos I added enchilada sauce from trader Joe's (the best!) to cover the tortilla, then a layer of chopped black olives and the cheese, then a tortilla and the black bean/corn mixture. I repeated and added enchilada sauce every time with the pintos. I poured more enchilada sauce over the top to cover all visible tortillas. I used shredded 3 cheese blend. It was so good! I've never seen my son eat more of anything, and he had leftovers the next day.
