Mrs. Sigg's Snickerdoodles

Excellent cookies! I took them out of the oven after eight minutes and left them on the cookie sheet for a few minutes. They turned out great!

Easy Batter Fruit Cobbler

I used three cups of fruit (two cups of fresh blackberries and one cup of sliced strawberries) and decreased the butter to three tablespoons. I got lots of compliments on this dessert. It was so easy to prepare.

Fantastic Black Bean Chili

Great chili and so easy to make! I cooked the onion and garlic in olive oil, added about a tablespoon of cumin and a half tsp. of red pepper flakes, and increased the tomatoes to 28 oz. After browning the meat, I put it all in the crockpot for several hours and it tasted wonderful!

Minty Cocoa Mousse

Mulligatawny Soup I

Excellent soup! I increased the servings to eight and used 3 TBS. of curry (2 TBS. regular curry, 1 TBS. of Calcutta Heat curry seasoning). I left out the celery and used long grain white rice (adding more than the recipe called for). It turned out pretty thick, so I added extra broth. I'd definitely make this again!

Pan Seared Lemon Tilapia with Parmesan Pasta

Excellent and easy...I'd definitely make this again! I used a half teaspoon of the seasonings for the fish and an eighth of a teaspoon of the seasonings for the pasta. I didn't have macaroni noodles and used mini penne noodles instead. Oh, and I didn't have the cilantro, so I just left that out. So good!

Oatmeal Peanut Butter Cookies

I thought these were great! I used all shortening (plus six teaspoons of water) because I needed them to be lactose free. I increased the PB by a half cup and the oats by a quarter cup. Mine cooked for twelve minutes and were perfect.

Chicken with Peanut Curry Yogurt Sauce

My husband made this recipe and left out the bell peppers (because I don't care for them). It tasted good and he said it was very easy to put together. I'd recommend adding red pepper flakes or something to make it more spicy. It's pretty mild, though good.

Yum, these are soooo good! I halved the recipe (though still got 28 cookies), slightly increased the vanilla and left out the nuts. I'd definitely make these again!

Raspberry Streusel Muffins

Chicken and Corn Chili

I thought this was ready good and fairly easy to put together. I cooked the chicken in the crockpot on high for an hour and a half and then on low for a couple hours. I added 1/2 cup of chicken broth to the chicken/salsa mix as well as two TBS. of minced garlic. I doubled the corn, used 1 can each of black and pinto beans and put in a can of diced tomatoes. It was great served with shredded cheese and sour cream on top.

Mexican Pizza

I really enjoyed this pizza! I made my own taco seasoning (from this website), and added 3 tsp. to the sour cream/cream cheese mixture and then put in the equivalent of a taco seasoning packet (7 tsp.) in the meat mixture. I also added a can of refried beans to the meat. Yum!

Layered Macaroni Casserole

This was very good! I misread the directions and ended up doing three layers each of the meat, macaroni and cheese layers...it still turned out well. I added extra Cheddar and Parmesan cheeses and added a few sprinkles of Creole Seasoning to the meat mixture. Yum!

King Ranch Chicken Casserole III

Very good! I cut the tortillas in strips and dipped them in the chicken broth as others suggested. I sauted the onion with some garlic and left out the bell peppers. I also tossed the cheese with the chili powder and thought the 2 cups of broth was a good amount. Next time, I think I'll try flour tortillas or crushed tortilla chips as others have done. But, it was still very good!

Crispy Chicken Parmesan

This recipe was a hit! I didn't have enough croutons so I used a combination of plain bread crumbs and crushed Cheerios (I was desperate!) and then added some Parmesan cheese, garlic powder and onion powder to the crouton/bread crumb/Cheerios mix. When the chicken was done, I poured some homemade tomato sauce over it and sprinkled it with mozzarella cheese and returned it to the oven until the cheese melted. Good stuff!

Chicken Pot Pie VIII

A great pot pie!...I cheated and used a store bought crust. I reduced the broth by about half a cup and cooked the veggies in the broth for about ten minutes. I left out the celery and used frozen peas instead. I'll definitely make this recipe again!

Cajun Style Burgers

My husband thought these burgers were great! I halved the recipe (though still used an entire egg), left out the green onions and sprinkled the burgers with onion powder instead. I also mixed a few tablespoons of shredded cheddar into the meat mixture. We topped the burgers with the sauce and some sauted mushrooms. I'll definitely make these again!
