Veggie Pot Pie

I thought this was great, especially since I'm generally used to chicken in my pot pie. I substituted a cup of frozen peas for the cauliflower and left out the celery. I added about two extra tablespoons of cornstarch and tripled the amount of garlic. I couldn't fit all the veggies in the pie crust, so I froze the extra for another time. Very, very good!

Sweeter Muffins

I was pleasantly surprised by how good these muffins turned out! They are super easy to make and were almost (though not quite) bakery quality...I still thought they deserved a "5." I added a large handful of mini chocolate chips and took another reviewer's recommendation of adding a tsp. of jam in the middle. I only got eight good sized muffins instead of twelve. But, they are good!!

Lasagna Alfredo Roll Ups

These were very good! I substituted cottage cheese for the ricotta cheese and sauted mushrooms with the spinach and added some minced garlic in there too. I used a combination of alfredo and tomato sauces and put a little mozzarella cheese in the lasagna roll ups. Yum!

Peaches 'N Cream Pie

Good pie! I didn't make any changes to the recipe. It was easy to make and I'm sure it would be good with other canned fruits as well (pears, cherries, etc.).

Pizza Casserole

Easy to assemble and tasted good! I used macaroni noodles (didn't have egg noodles), pre-sliced pepperoni and marinara sauce instead of pizza sauce. My husband liked it and that's always important! :)

Blackened Fish

My husband really enjoyed this recipe! (I'm not much of a fish person, but I had a taste and it wasn't bad.) We used rainbow trout we caught earlier in the day and made the recipe as stated, except that we cooked it on a Foreman type of grill. It just needed to cook a little longer than stated in the recipe.

Mexican Lasagna

My husband and I enjoyed this new twist on regular lasagna. I reduced the recipe to six servings and put it in an 8X8X2 inch pan. I used a full can of refried beans to make the layers a little thicker and added a small amount of shredded cheddar cheese to each layer. I also used taco seasoning instead of the other seasonings and supplemented that with a sprinkle of cajun seasoning and garlic powder. As recommended by another reviewer, I soaked the lasagna noodles for twenty minutes which reduced the overall baking time to approximately 45 minutes. I'll likely make this recipe again!

Best of the Best Blueberry Muffins

These were great blueberry muffins! I used regular milk instead of buttermilk and frozen blueberries instead of fresh. They came out just fine. The sugar on the top was a tasty added touch!

Easiest Peanut Butter Fudge

White Chip Chocolate Cookies

These are very good cookies and were well liked by all who tried them. I didn't have enough white chocolate chips and had to use a combination of milk chocolate and semi-sweet chocolate chips to make up the remaining 2/3 cup that I needed. They were great and spread just enough!

Chewy Chocolate Chip Oatmeal Cookies

I received so many compliments about these cookies! I took others' recommendations of increasing the flour and adding an extra half tsp. of baking soda. I used an extra cup of chocolate chips and refridgerated the dough for about an hour. The results were amazing! Yum!

Jelly-Filled Muffins

I made these for my husband to take to work and he really liked them. I only got 10 muffins out of the batter and put apricot jam in some and raspberry jelly in the others. These are very easy to make which is always a plus!

Slow Cooker Cranberry Roast

Excellent! I added about a third cup of water to the onion soup mix and put some minced garlic and chopped onion on top of the roast before topping it with the cranberry. It was incredibly easy to put together and tasted great!

Honey-Garlic Glazed Meatballs

These were a hit! I added minced garlic to the meatballs and doubled the garlic in the sauce. I substituted seasoned salt for regular salt and used ground turkey instead of beef. I also doubled the amount of sauce. Yum!

Spaghetti Pizza Lasagna

I reduced this recipe to six serving and made two layers each of the pasta, milk mixture, pasta sauce, beef, spices and pepperoni. I topped it with a combination of mozzarella and cheddar cheeses. I added chopped onion, three teaspoons of minced garlic, two teaspoons of Creole seasoning and a pinch of red pepper flakes to the ground beef. I chopped up the pepperoni slices for my top layer of pepperoni and sprinkled on some seasoning salt. I also waited until the last five minutes of cooking time to add the top layer of cheese. Next time, I plan on adding chopped olives and mushrooms. My husband and I thought it was very good!

Ethiopian Cabbage Dish

Excellent dish! I brought it to an Ethiopian themed dinner and was pleased with the results. I reduced the olive oil by half and doubled the spices. What a great blend of spices (and not too spicy)...I'd definitely have this dish again.

Chocolate Chip Peppermint Cookies

Good cookies! I added an extra 3 TBSP. of flour and reduced the baking time to 10-12 minutes (instead of 12-15 minutes). I also put in an extra quarter teaspoon of peppermint extract (and could probably have added more.) The cookies came out soft and taste very good!

Buzzsaw's BBQ Sauce

Excellent BBQ sauce and easy to make! I added an extra clove of garlic, several sprinkles of cumin, 1 tsp. of hot sauce and some honey. We used it for chicken and are looking forward to trying it with other meats!
