Simple Sweet and Spicy Chicken Wraps

This is a great summer recipe since it requires little cooking! I really enjoyed the refreshing taste of the dressing. I added white rice and cheese to the wraps but otherwise followed the recipe. It makes a nice dinner.

Enchilada Meatballs

These weren't bad; they just weren't all that exciting. I added some chopped onion and a tablespoon of minced garlic. These don't compare to my favorite meatball recipe on this website, Cajun Appetizer Meatballs. Those absolutely rock!

Blueberry Apple Crisp

I halved this recipe and took others' suggestions to use more flour and to replace half the flour in the topping with oatmeal. I thought it was very good and agree that it is more of a cobbler than a crisp.

Taco Salad I

I enjoyed this taco salad and took others' recommendations to use nacho flavored Doritos. I left the chips and dressing out of the salad and instead had each person use whatever amount of chips and dressing they wanted. That way the chips wouldn't get too soggy and the dressing wouldn't made the salad mix too liquidy.

Oven Baked Garlic and Parmesan Fries

These are great baked fries though be sure not to cut them too thin. Mine fell apart a bit when tossing them and they ended up being somewhat mushy instead of crisp. They still tasted very good though. I used dried parsley instead of fresh and slightly reduced the Parmesan cheese.

Sausage Pasta

Good recipe...I think next time I'll either use fresh spinach or I will thaw the frozen spinach and squeeze it dry. This is a good recipe for those who are lactose intolerant (if you omit the Parmesan cheese). It's always a good sign when my husband says he'd have this dish again. :)

Mexican Chocolate Cake

An excellent, moist chocolate cake...I used half white sugar, half brown, doubled the cinnamon and used a cup of coffee instead of a cup of water. I frosted it with the chocolate cookie buttercream frosting from this website. Very good!

Cranberry Eggnog Cornbread Scones

I made these this last week...the night my second daughter was born! :) I didn't have eggnog so I substituted milk with a bit of nutmeg and vanilla extract added to it. I thought the scones were slightly dry but they still tasted very good. I used blueberry infused dried cranberries! Yum!

Best Spanish Rice

I followed the recipe though found I had to add extra water and cook the rice for much longer than suggested in the recipe. It tasted okay though I will try a different recipe in the future.

Applesauce Bars

My bars were more like cake because I doubled the recipe but still used a 9X13 pan. I think another reviewer suggested using just one egg to make them more bar like. I also added 2/3 c. of raisins and one peeled, finely chopped apple. They taste good and are really moist. I sprinkled powdered sugar on top instead of doing the frosting.

Apple Streusel Muffins

I enjoyed these muffins though they are a tad bland. I added some extra cinnamon and a dash of nutmeg to the batter. I also subbed half brown sugar for the white sugar in the batter and used only brown sugar for the topping.

Hearty Ham Casserole

This is definitely a hearty casserole. Unfortunately, my husband wasn't too excited about it. I cooked the potatoes with minced garlic and added a third cup of the cheese to the sauce. I also used three cups of ham and slightly more potatoes than the recipe called for. I likely won't be making this again though.

Green Chicken Enchilada

This was so easy to make, which is always a plus, and my husband really liked it! I sauted the chicken with garlic, onion and some spices. I also took others' recommendations to add a bit of sauce to each of the enchiladas before rolling them. I'd make this again!

Cornbread Muffins I

These were good cornbread muffins...I used canned corn, which definitely gave the muffins a different though good consistency. They are sweet but I like them that way. Next time, I'll probably try a different recipe.
