Chocolate Oatmeal Cookies

Chicken Enchilada Soup III

Great soup! I didn't have enchilada sauce and used salsa instead. I also threw in a handful of frozen corn. I'm hoping it freezes well since it made a lot!

Spicy Mexican Salad

A fun sandwich and, of course, very kid friendly! It has lots of possibilities too...you could use two different types of jelly or do a layer with more PB and then a layer of bananas.

Mostaccioli Mushroom Bake

I love mushrooms and used fresh mushrooms which I sauted with the onion and some garlic. I browned the meat separately with some minced garlic and added some Creole seasoning and Italian seasoning and mixed everything together. I split it into two 8 X 8 pans and froze one for later. I sprinkled Parmesan cheese over the tops of both. Yum...at least a 4.5 rating!

Quick and Easy Pancit

Yummy Blueberry Cobbler

Good cobbler...I used two cups of frozen blueberries and a cup of frozen blackberries. I reduced the boiling water to half a cup and used three quarters of a cup of sugar in the batter and topping. While it was good, I'll probably try a different cobbler recipe next time.

Corn Bread Loaf

I wasn't too impressed...the corn bread seemed a bit dry. I used corn flour, doubled the sugar and substituted vegetable oil for the shortening...maybe I should have stuck with the original recipe. Oh well...I'll try a different recipe for corn bread next time.

Bruschetta Chicken Bake

Easy to prepare dish but needs some extra seasonings. I added balsamic vinegar to the chicken as well as stuffing mix (as recommended by others) and used a mix of cheeses. I might make it again if I was in a hurry.

Blackberry Pie I

My husband made this with blackberries he picked from the neighborhood. The quarter cup of sugar on top of the pie seemed a bit much. Overall, a great pie!

Blueberry Oat Waffles

These are good and hearty waffles. I added a teaspoon of cinnamon but otherwise followed the recipe. My one complaint was that the berries sometimes stuck to the waffle iron despite spraying the iron with nonstick cooking spray.

Cornbread Chicken Pot Pie

Based on previous reviewers, I added a lot of spices...minced garlic to the chicken mixture and onion powder, garlic powder, seasoned salt, Parmesan cheese and red pepper flakes to the cornbread topping. I much prefer Chicken Souiza Cornbread Bake (on this website), though it requires a bit more work than this recipe, it's definitely worth it!

Mint Chicken

I thought I'd make this chicken dish so as to use up some of the fresh mint leaves from the garden. I tripled the amount of garlic and decreased the butter by half. My hungry husband said it turned out well!

Cooky Cookies

I was expecting great things from these cookies and was disappointed with the end result. I halved the recipe and replaced the nuts with M & M's and used mostly applesauce instead of the full amount of oil. Oh well...there's lots of other cookie recipes on this site to try!

Baked Chicken Nuggets

These are very good chicken nuggets! I dipped them in an egg before putting them in the bread crumb mix. I think the bread crumb mix could be reduced by a third...I had a lot of bread crumb mix left over.

Blueberry Quick Bread

I halved the recipe and added the blueberries to the flour mixture to keep them from sinking to the bottom of the pan. I added a half teaspoon of cinnamon, as others suggested. I will probably try a different recipe next time as I wasn't super impressed with this one.
