Grandmother's Muffins

These muffins were okay...I increased the flour to almost two cups and added a dash of cinnamon and almost a cup of mini chocolate chips. They were done in 25 minutes. I doubt I'll make them again.

Buttermilk Cinnamon Bread

Mmmm...Really good bread! I didn't have buttermilk (used 1 TBS. of lemon juice with milk and let it sit for five minutes) and omitted the nuts since I didn't have any of those either. It still turned out very well!

Microwave Corn on the Cob

Easy way to cook corn on the cob...Be careful about how long you cook it though. I overcooked mine.

Chef John's Scones

These scones were great! I didn't have currents so I added a tablespoon of grated lemon peel. They gave the scones a delicate lemon flavor. I suppose that if you wanted a stronger lemon flavor you could substitute the sour cream with lemon yogurt. I'd make these again!

Easy recipe though I didn't find it all that exciting. I added some extra garlic and used 1 1/2 TBS. of dried basil since I didn't have any fresh on hand.

Rice Balls a la Tim

I enjoyed these and so did my kids (12 mo. and 2 1/2 years). Unfortunately, my husband wasn't a fan of them. I followed the recipe with the exception of adding some spices to the meat mixture.

Coconut Bread

Nice flavor and tasty bread. I particularly liked the simplicity of the recipe. I substituted a quarter of the milk with sour cream to ensure that it would be moist (and it was).

Chewy Peanut Butter Chocolate Chip Cookies

I went to the web address for this recipe. The picture of this recipe makes it look like it is chocolate, which it is not. It's good and sort of reminded me of banana cake. I probably won't make it again though.

Taco Pizza

I made my own crust and made just one pizza...I used a little less cheese and added lettuce, tomato and doritos to the top of the pizza once it cooled a little. My husband liked it though I think I'll try a different taco pizza recipe next time.

Chicken Lasagna with Andouille Sausage

This is a great and unique lasagna. I left out the celery and red bell pepper and added extra cheese between the layers to help them stay together. Next time, I may layer in some ricotta or cottage cheese mixed with garlic and chopped spinach. Also, I split my lasagna between two eight inch pans and froze one for later.

Orange Beef and Beans

My husband enjoyed this dish...the only change I made was to use frozen green beans instead of fresh ones. I might increase the sauce next time and I'd consider adding some red pepper flakes to give it a little kick. The orange flavor is subtle but good.
