Jelly-Filled Muffins

I made these for my husband to take to work and he really liked them. I only got 10 muffins out of the batter and put apricot jam in some and raspberry jelly in the others. These are very easy to make which is always a plus!

Apple Cranberry Cobbler

Good cobbler and my company liked it too...I thought it was a bit too liquidy but still good. I sprinkled some cinnamon over the topping just before baking it.

Dad's New Zealand Mince Stew

I halved this recipe and was glad I did since it wasn't the hit I thought it would be with my husband. I added some carrots, peas and a layer of mashed potatoes on top. I also cut the pepper to 1 tablespoon and put everything in the crockpot after completing step one. I don't think I'll be making this again.

Orange Loaf

My husband said the bread was good but not "out of this world." I added a little extra orange juice to the bread and halved the sauce/glaze. If I were to make it again, I might increase the amount of orange zest.

Enchiladas

Very good and very easy to make! I substituted garlic for the jalapeno pepper and sour cream for the yogurt. I also used flour tortillas since I prefer them to corn tortillas. This recipe is definitely worth trying!

Red, White, and Blue Fruit Smoothie

Pretty good...I made mine without bananas (allergic) and used blackberries instead of blueberries (didn't have any). I also added a little honey. It was a refreshing treat.

Finnish Kropser (Baked Pancakes)

FIVE STAR RECIPE! Amazing baked pancake! It was easy to make, but be sure to adjust the temperature. I baked mine at 400 degrees for 32 minutes and it turned out perfectly. I added a few blackberries to the batter and then sprinkled the top with powdered sugar when it was done. Incredibly good!

Low-Fat Potato Soup

Very good soup...I substituted garlic for the onion and carrots for the celery. I also used 1% milk instead of the evaporated milk. It was very easy to make!

Chocolate Chip Coffee Cake

My husband liked this coffee cake, although I wasn't as impressed. I left out the pecans but otherwise followed the recipe. I found that the chocolate chips sunk to the bottom so it might be better to save about a quarter cup to sprinkle on the top before adding the cinnamon/sugar mixture.

Cajun Chicken Pasta

Great recipe...I cut the chicken into bite sized pieces and chopped the red pepper into small pieces as well. (I left out the green pepper.) I used fat free half and half instead of cream. I found the recipe makes more like four servings instead of two, which is nice since we'll have leftovers tomorrow.

A-Maize-ing Corn Chowder

Good soup though I wouldn't consider it "a-maize-ing." I improvised by using ham instead of bacon (since I had leftover ham) and frozen corn in place of cream-style corn, which I also did not have in the cupboard. I added some leftover mashed potatoes and some sprinkles of Cajun Seasoning. It was good though I doubt I will make it again.

The Best Sweet and Sour Meatballs

I used the meatball recipe from Cajun Appetizer Meatballs (though omitted the hot sauce and Cajun Seasoning) and baked the meatballs in the oven. For the sauce, I used one cup of pineapple juice in place of some of the water and reduced the brown sugar to 3/4 cup. I boiled the sauce, poured it over the baked meatballs and put it all in the oven for about twenty minutes. I was overall pleased with the results though it did seem that a little something was missed from the sauce.

Crunchy Oven Fried Tilapia

Not my favorite...I added a few extra seasonings to the bread crumb/cornmeal mix (Old Bay seasoning, Cajun seasoning, garlic powder) though still found it bland. I like to cover the "fishy" taste of fish and this did not do the job.

Oven Fried Parmesan Chicken

I scaled the recipe down to four serving and used eight drumsticks and a breast. I cut out the salt, used less bread crumbs and added a few sprinkles of onion and garlic powder to the crumb mixture. My husband really enjoyed it!

Golden Potato Soup

This is one of the best potato soup recipes I've ever tried. I used kielbasa instead of ham and sauted the kielbasa with onions (left out the celery) and minced garlic and added it to the soup at the end. I also used cheddar cheese instead of American cheese. I added extra water and a little milk to thin it since it was so thick. So good!

Sweet Cornbread Cake

Excellent cornbread! I halved the recipe and followed Jillian's recommendation of using a cup of flour and a cup of cornmeal. It was sweet but not overly so! I'd definitely make this again.

Chicken Shepherd's Pie

This was okay though I won't make it again. I added a can of cream of chicken soup since others indicated it was dry. I also substituted frozen broccoli for the red peppers since I don't care for peppers.

Calzone Rolls

I made my own bread dough since I didn't have the dry milk powder called for in the recipe. I also left out the mushrooms and peppers since I didn't have any on hand. Despite the omissions, the rolls came out very well! For one half of the dough, I spread bbq sauce instead of tomato sauce and used chicken to make a bbq chicken calzone. This recipe has a lot of possibilities.
