Dutch Apple Loaf

This was a great way to use up some aging apples that I still had from the farmer's market! I substituted all the butter (in the bread, not the streusel topping) with applesauce and it was moist and delicious! I also used half white and half whole wheat flour, used brown sugar in the topping, and added 2 tsp of cinnamon to the bread itself. Will make this again and again!

Janine's Best Banana Bread

Quite good! As others suggested, I baked it at 325. I also used 1/2 whole wheat flour, added 1 tsp vanilla, and 1/2 tsp each of cinnamon and nutmeg. I also happened to replace half the sugar with honey, only because I had some very crystallized honey to use up, and that worked quite well. I will keep this recipe as a regular and will be eating this for breakfast tomorrow!

Vegan Split Pea Soup II

This needed a lot more spice than the recipe calls for. I also had trouble getting the peas to cook to the very soft consistency I wanted and I had even cooked them a bit beforehand. I pureed it in the blender in the end.

Seven Minute Frosting I

I thought it would be more fluffy, but by the time it was spreadable it was more marshmallowy. Tasted fine, but it is still really sweet unlike what the recipe says about it being not as sweet.

One Bowl Brownies

These are great! In the interest of cutting some fat and calories, I did replace 1/2 cup of the butter with 1/2 cup applesauce, and then reduced the sugar from 2 to 1 1/2 cups. Still sweet and moist enough!

Veggie Burgers

The taste was great. The eggs I had on hand were really old so I tried the standard soy flour/water egg substitute but it didn't keep these together; they really fell apart. Friends still loved them though!

Classic Minestrone

Excellent! I quadrupled the recipe for a dinner party so I used a combination of cannelini, dark and light kidney beans, because that's what I had on hand. I made it the night before, let it sit in the fridge, and reheated it for dinner. I think it really helped the flavor set in all the vegetables. My friends still compliment me on it.

Soft Peanut Butter Cookies

Peanut butter makes me sick so I didn't eat them, but was told they tasted great. However, they did not stay soft even when I took them out of the oven a bit early.
