Cabbage Jambalaya

Reviewed: Nov. 5, 2005
I have made hundreds of recipes from this site. I'm reviewing this one first because it's my favorite. I make it just as it is and it's great or I recently started added a big bag of coleslaw instead of the head of cabbage when I'm pressed for time. I've also used two cans of tomato soup to make it taste more like cabbage rolls and that's great as well. Thanks for putting it on Susan, it's my Grandson's favorite food (he's fifteen months old)

Best Ever Pie Crust

Reviewed: Nov. 5, 2005
I used this recipe to make pie crust from scratch for the first time. Was by far the best pie crust we've ever had. Very handy being able to make ahead. I usually have a batch made in the fridge now for everything from pie to quiche. Thanks for sharing.

Penne and Vodka Sauce

Reviewed: Nov. 22, 2005
Thought it was too salty and the texture lacked substance with just the pancetta. I may try it again with chicken as the main meat and pancetta as a compliment.

Chicken Supreme III

Reviewed: May 6, 2006
My family loved it with the additions suggested by previous reviewers, only 1/2 cup of butter, stock instead of water, milk mixed with the soup and a generous layer of steamed broccoli. Great taste for a quick weeknight throw together dinner in one pot.

I doubled the recipe and used a full can of full berry cranberry sauce (they were on sale and I was looking for something to use them in) Turned out great, very moist and tasty. I also added 1 teaspoon of baking poweder for leavening.

Cream Cheese Coffee Cake II

Reviewed: May 16, 2006
I reduced the lemon to 1 teaspoon and made 12 large muffins. A little hard to get out of the muffin tin because of the soft middle, but very tasty. Went quick.

Sausage and Rice Stuffed Peppers

Reviewed: May 17, 2006
Recipe turned out great. I won't use minute rice so I used half a pound of ground beef half a pound of ground pork browned them and the chopped onion in a large frying pan with a lid. When that was finished browning I added 2 cups of raw long grain white rice and the rest of the ingredients brought it to a boil reduced heat to medium low and let it simmer for a half hour until the rice was cooked. Then I stuff the peppers raw, baked them for half an hour added the cheese on top stuck them back under the broiler until cheese bubbled. Only one pan to clean up and all the flavors blended well.

Oat Bran Muffins

Reviewed: May 25, 2006
The first time I made these muffins I thought they were too salty and a bit dry. The second time I made them I reduced the baking soda and baking powder to 1 teaspoon each, increased the oil to 1/3 of a cup and added a cup of blueberries. Turned out perfect. It is VERY important to let the ingredients sit for at least 10 minutes to allow the oat bran to soften.

Italian Meatball Sandwich Casserole

Reviewed: Jun. 1, 2006
The recipe as written is good. I buttered the bread and sprinkled garlic salt on it then toasted it in the oven while it was preheating, made it perfect, not soggy at all. I missed vegetables though so the second time I made it I browned the meat with chopped onions, celery, green and red peppers and used a large jar of a maranara sauce. Turned out great

Coconut-Avocado Ice Cream

Reviewed: Nov. 13, 2006
I used two ripe avocado's, a can each of good quality coconut milk and coconut cream about 1/2 cup of dark brown sugar and a 1/4 cup of cocoa. It is delicious and makes a very nutritious snack for my grandson who is allergic to milk and eggs. Thanks so much for the idea!

Pizza Crust Fantastico

Reviewed: Nov. 19, 2006
I thought the tomato in the crust competed with the toppings and was acidic tasting. It was also sticky and hard to work with. I prefer a regular olive oil crust with a tablespoon or so of Italian seasoning.

Ciabatta Bread

Reviewed: May 7, 2007
I've been looking for a good hamburger bun recipe and this is it. I dump it all in an oiled boil over a pan of boiling water in the oven for an hour after the initial 15 minute relax. With floured hands I form 5 flatten balls, roll them in sesame seeds, spray them to keep them moist and let them rest again while the oven heats (usually for 20 minutes). I spray them at three minutes and 6 minutes and leave the pan of water underneath while they bake. They are perfect, way better than anything you can buy! Thanks for sharing!

Fettuccini Carbonara

Reviewed: May 11, 2007
I cook the bacon flat on cookies sheets in the oven and saute a large chopped onion in a frying pan. I add a cup of heavy cream to the onion pan after I pull it off flame. I beat three whole eggs which I toss with the cooked pasta first by itself. Delicious!
