Scalloped Potatoes 'n' Franks

Reviewed: Feb. 21, 2008
An instant classic in our house! I cooked it for the described lengths at 400 degrees convection and it was cooked to perfection. Next time I'm going to add a layer of chopped broccoli. Thanks so much for sharing this yummy recipe!

Charleston Breakfast Casserole

Reviewed: Jan. 17, 2008
I cubed and toasted a day old loaf of french bread while the oven was preheating, sauted a large onion in the bacon grease with the red pepper. Used 10 eggs and 1/2 and 1/2 instead of milk. Was perfectly cooked after an hour. We loved it! Thanks for sharing!

Crustless Spinach Quiche

Reviewed: Dec. 16, 2007
This recipe is awesome! The entire outside surface gets a wonderful self-crust instead of the typical burnt around the rim - gooey on the bottom quiche crust. And you don't even have to think about gluten! Thanks for sharing!

Chicken with Chipotle

Reviewed: Nov. 10, 2007
This sauce is great! This was my first time using chipotle in adobo. I only used one and froze the rest individually on a cookie sheet. We love it and we will be using this very versatile sauce with a variety of meats and starches. Thanks for sharing!

Potato-Topped Chili Loaf

Reviewed: Oct. 29, 2007
I browned 1 pound of ground beef in a frying pan so I could cook a whole large onion and three stalks of celery with it. I threw black beans in with the meat once it was cooked. I nuked leftover mashed potatoes and mixed in cream corn and the cheese. It's delicious! A south western flavoured shepard's pie. I'm going to double my mashed potatoes often to use this recipe. Thanks for sharing!

Delicious Gluten-Free Pancakes

Reviewed: Oct. 26, 2007
Well named. Excellent recipe. We cut the water down to 1 cup. For the very best waffles we use one cup of milk and beat the egg whites to stiff peaks and fold them in just before baking. Thanks for sharing this great and versatile recipe!

Bow Tie Chicken: Tux Optional

Reviewed: Sep. 25, 2007
I sauted an onion in the chicken pan as well and added a cup and a half of mozza when I took it off heat in addition to using 1/2 cup of parm with the cracker crust. I used about two cups of four cheese ranch between what was mixed in with the pasta and what was drizzled on top. We liked this dish more than I was expecting, it's very tasty. I'll be adding it to my pantry dinner list. Thanks for sharing!

Mom's Best Pork Chops

Reviewed: Sep. 24, 2007
These turned out great! I pounded centre cut loin chops to a 1/2 inch (after I brined them for 2 hours), dipped them in flour, the egg and milk (I only used 1 egg for two large chops) and I ground up two bread heals in my processer with two tsp of Mrs Dash instead of the crackers. I served it with rice and a sauce made from a can of cream of mushroom soup, a couple of dollops of sour cream and a 1/3 cup of sherry. Delicious! Thanks for the idea!

Taco Pizza

Reviewed: Sep. 20, 2007
We use Tyler Florence's pizza recipe so I can't comment on this one but the idea to mix the refried beans with the salsa was a good one. We browned the beef and chopped onion together, added 1 cup of water and the taco seasoning and cooked it down as directed on the package. We warmed a can of refried beans with enough salsa to make it the right consistency to use as the base sauce. We put the beans down then the crumbled beef and cheese and cooked it in a 500 degree oven. We added chopped tomato and lettuce and piped sour cream over in a sandwich bag with one corner cut off when it came out of the oven. Best taco pizza we've ever had. Thanks for the idea.

Zucchini Yogurt Multigrain Muffins

Reviewed: Sep. 18, 2007
I used 1 cup each of all purpose and wheat flours, 1/2 cup oat bran and 1/2 cup of ground flax. I used french vanilla yogurt, virgin coconut oil, 3/4 cup of brown sugar, 1/2 cup of honey, 3/4 cup of raisins soaked in boiling water and double the carrots and zuchini. I added a pinch of cloves and ginger. They are delicious and nutritious, thanks for sharing! There will be some of these in my freezer from now on.

The texture of these rolls is fantastic. I found them a touch too sweet and will only use three tablespoons of sugar next time I make them. Thanks for sharing!

Greek Lentil Soup (Fakes)

Reviewed: Sep. 15, 2007
I found this flavorless as written. It benefited from a teaspoon of cumin and a 1/4 teaspoon of cayenne. I served it with balsamic vinegar and feta as per another reviewers suggestion. The bites with the balsamic and feta were tasty, but overall not worth making again. This is the only dinner I've ever made that my family wouldn't finish.

Italian Sausage - Tuscan Style

Reviewed: Sep. 13, 2007
I've tried several recipes for Italian sausage and this one is by far the best. I scale it to one pound of pork, reduce the salt to 1 tsp and add a teaspoon of fennel. Perfect sausage without fillers for half the price! Thanks for sharing!

Pork Apple Burgers

Reviewed: Sep. 5, 2007
I only used 1 pound of ground pork, grated the apple, carmelized the onion, used hoisin sauce instead of teriyaki and added about 1/2 to 3/4 cup of crushed ritz crackers. We grilled the pineapple slices slightly. Very tasty, will definately be making again. Thanks for sharing.

Bran Flax Muffins

Reviewed: Aug. 2, 2007
Thanks so much for sharing this great recipe! Rarely do you find something so healthy that tastes so delicious! I used half white and half wheat flour, 1/4 inch diced the apples, soaked 3/4 cup of raisins in boiling for an hour before using them, 1/2 cup each of ground sunflower and pumpking seeds, added 2 tablespoons of molasses and used 3 tablespoons of coconut oil instead of vegetable (to make up for the seeds instead of nuts) and I added a couple of shakes of cloves, nutmeg and ginger. They are perfect and if it's possible they are better out of the freezer than fresh. What a treat!

Dash's Donair

Reviewed: Jul. 30, 2007
Wow, thanks for sharing! We developed an addiction for donair's when we had a great shop closeby. When it closed down I tried a couple of recipes and nothing came close. This meat recipe is BANG ON! We serve it with Tzatziki sauce and fresh pita's made with Peppy's Pita recipe from this site. Delectable!

Cottage Pudding - Upside Down Cake

Reviewed: Jul. 19, 2007
Thanks so much for sharing this delicious recipe! I use butter instead of shortening and reduce the white sugar to 3/4 of a cup. Took another reviewers suggestion to make it in my 12 inch cast iron pan. Fast, easy, scrumptious and only one pan! We pour a little carmel sauce over it and it doesn't even need ice cream.
